Ingredients

Powdered sugar 250 g
Flour / s 650 g
Butter 50 g
Honey 100 g
Eggs 4 things.
Baking soda 1 tsp
Ground cinnamon 1 tsp
Ground anise on the tip of a knife
Ground cloves on the tip of a knife
Ground allspice on the tip of a knife

Cooking method

  • Mix the icing sugar with egg, spices, softened butter and honey. Then stir in flour and baking soda and knead into a tight dough. Place in a plastic bag and refrigerate for a week. Then roll it out about 0.5 cm thick, cut the gingerbread and bake at 180 degrees for about 8 minutes.
  • Then decorate to your liking. I decorated with protein glaze.

About the soda. Why did you decide that the recipe is low in acid? pH of honey is about 3.5-3.7. Is this not enough to pay off 1 tsp. soda?

Olya, I'm glad that I liked the idea! The glaze did this. Whipped the whites until the strongest foam, as the confectioners say, to steady peaks. Then she began to add powdered sugar with tablespoons. Gone for 2 squirrels about a glass of powder. I did not add acid. The glaze hardened well overnight. Does not crumble. It lasts all the holidays until we eat the gingerbread.

After cooling, the gingerbread becomes hard, but they bite off quite easily and melt in the mouth, because the dough is honey. It is not necessary to put the dough for a week, I baked for the first time the next day (every other night). At first, I myself did not see the point in this, until I saw how the 4-week aging of the gingerbread dough was transformed according to the recipe "Staropolsky Gingerbread". The dough becomes looser, airy, rises better, and accordingly, the taste of gingerbread improves. If you bake right away, or after a night, the gingerbread will still be tasty, but denser. Children can handle it!
