Ingredients

Minced meat 500 gr.
Bulb onions 1 PC.
Garlic 2 slices
Milk 150 ml.
Chleb stale 100 g
Cheese 30 gr.
Salt pepper
For the sauce:
Milk 500 ml
Flour 3 tbsp. l. (no slide)
Butter 80 gr.

Cooking method

  • Cooking minced meat:
  • 1. Crumble the bread and pour over the milk until it softens.
  • 2. Cut the onion into small pieces, peel the garlic and chop everything with a blender. You can skip the onion and garlic through a meat grinder.
  • 3. Mix minced meat, onion with garlic, soaked bread (after crushing it). Mix everything well. Season with salt and pepper.
  • Now let's prepare the milk sauce for the cutlets.
  • Heat the pan well, melt most of the butter, gradually add flour.
  • Reduce heat, and sauté, stirring constantly, until the smell of roasted nut appears. In this case, the color of the browning should not change.
  • Cool the finished passivation slightly and slowly begin to add milk. Pouring in milk, we continue to grind the mass so that there are no lumps.
  • We continue to heat the sauce so that it boils for 5-7 minutes. To prevent a film from forming on top, add the remaining butter. The sauce should thicken. We try, salt.
  • From the finished cutlet mass, we form cutlets.

  • Grease the form in which we will bake the cutlets and put the cutlets in it. On each cutlet it is necessary to make a depression with the edge of the palm. Right in the middle of the cutlet.

  • After we have placed the cutlets, with a tablespoon, first pour the sauce into the groove of the cutlet, and then along the edges of the mold.

  • Grate the cheese on a coarse grater. After 20 minutes, take the mold out of the oven and sprinkle the cutlets with cheese. We again send the form with cutlets to the oven. We bake them until tender.

The sauce was awesome, while it was interfering, I wanted to lick the spoon all the time, it is so delicious! I cooked more sauce (almost 900 ml of milk), since there was 1.2 kg of meat for minced meat. It turned out 14 cutlets, gravy was enough just right. And here they are:

Something I didn’t work as I wanted. Probably too much flour for such an amount of milk! And the sauce came from me in lumps, I had to filter it through a sieve and dilute it almost twice. And naturally the extra one remained. But I ate it like that, with a spoon, it tasted good !!! And the cutlets have absorbed everything, next time I will put 1 tbsp. l. without a hill of flour and more milk, it thickens strongly in the process.
