Ingredients

Biscuit:

Water (2 boiling water for biscuit

Instant coffee 1 tbsp. l.
Vanilla 1 g
Vegetable oil (odorless) 60 ml
Panna cotta cream:
Gelatin
(preferably in plates)

Cream 35% 500 ml
Milk 3.5% 500 ml
Sugar 120 g
Lemon zest 1 tsp
White chocolate 150 g
Interlayer:
Milk chocolate 50 g
Glaze:
Oil sl. for glaze 40 g
Black chocolate 125 125 g
Decor:
Black chocolate 125 125 g
Caramel:
Sugar 110 g
Water 75 ml
Salt slightly

  • I came up with the cake myself. I baked it for my chief architect, who studied in Rome and loves Italian cuisine. I tried my best to depict the most famous of the Italian monuments, and to match the Italian cuisine. I pleased the chef, even very much! The guests were also delighted.

  • 1. A set of products for a biscuit must be prepared and weighed in advance.
  • Mix flour, baking powder, cocoa and vanilla and sift.

  • 2. Beat the eggs until the volume increases at high mixer speed.

  • 3. Without ceasing to beat, add sugar, beat for at least 10 minutes.
  • Add boiling water 2 tbsp. l. and beat again until fluffy, pour in 60 ml vegetable oil in a thin stream, beat.

  • 4. Introduce the flour mixture into the beaten egg mass in two steps, mix by folding with a spatula. Add coffee, which is diluted in 1 tbsp. l. water, stir.

  • 5. The finished dough flows off the spatula with a ribbon.

  • 6. Place the dough in a mold 26 cm in diameter. Spin clockwise a couple of times (the dome will not swell!) And hit the mold with the dough on the table 2-3 times so that air bubbles come out.
  • Bake in an oven preheated to 180 "C for 35-40 minutes. Focus on your oven!

  • 7. Cool the biscuit in the form.

  • 8. Trim the sides, release the mold and leave to mature for 24 hours.

  • 9. Cut the sponge cake horizontally into 3 cakes.

  • Panna cotta cream:
  • 10. Soak gelatin in cold water.
  • 11. Mix the cream, milk and sugar, add the zest and stirring constantly with a whisk, bring to almost a boil, but do not boil.
  • Add squeezed gelatin, broken white chocolate into pieces, stir until they are completely dissolved and place in an ice bath to cool. Stir until the mass begins to thicken well and resembles a pudding.

  • 12. Place the cake into a high-rimmed culinary ring or a mold ring, the height of the rims can be increased with baking paper.

  • 13. Pour half of the cream on top and sprinkle with half of the milk chocolate.

  • 14. Cover with the second crust, spread with the remaining cream and sprinkle with the remaining milk chocolate. Cover with third crust and press down lightly.

  • Glaze:
  • 15. Melt 125 g of chocolate and 40 g of butter in a steam bath and put on top of the cake. Refrigerate for at least 6 hours.

  • 16. Carefully cut the cake around and release it from the mold. Place in the refrigerator.

  • 17. On a ribbon made of baking paper, the length of which corresponds to the volume of the cake, and the width of its height + 2 cm, we begin to draw with black melted chocolate 125 g. Let the chocolate freeze and wrap the ribbon around the cake and press firmly.

  • 18. Place cake in refrigerator, allow to set and carefully remove tape.
  • Decorate with caramel before serving.

  • 19. Mix sugar 110 gr with 75 ml of water and a little salt, cook until golden brown. Apply random patterns with a teaspoon on oiled baking paper.Allow to cool.
