Lightly salted salmon tartare with sesame seeds

Ingredients

salmon fillets 400 g
vodka 1 tbsp. l
dill bunch
salt 0.5 tbsp. l
sugar 0.5 tbsp. l
FOR SERVICE
shallot 2 goals
sesame oil (I have olive oil) 1 tbsp. l
grated ginger root 1 tsp
lemon juice 0.5 pcs
sesame seeds fried (forgot) 1 tbsp. l
chives
lemon zest
lime, bell pepper
ground pepper, salt

Cooking method

  • I bring to your attention tartare from everyone's favorite fish - salmon (you can use any fish of this family).
  • Let's prepare fish for tartare.
  • 1. Rub the fish fillet with vodka (on the side where there is no skin). Cut into 2 equal parts.
  • 2. Mix finely chopped dill with salt and sugar. We spread the mixture on both fish halves, put them together (skin on top). We put it in a bowl and press it with a heavy load. First, we stand for 2 hours at room temperature, then put it in the refrigerator for 1-2 days
  • 3. Shake the dill off the fish, wipe it with a paper towel and cut into small cubes.
  • Combine fish with oil, ginger, lemon juice and shallots chopped in a blender. Salt. pepper, stir.
  • Lightly salted salmon tartare with sesame seeds
  • 4. Divide the prepared fish into molds and refrigerate for 30 minutes.
  • Lightly salted salmon tartare with sesame seeds
  • 5. Flip the tins onto a platter, garnish the tartare with shallots, peppers, lemon and lime zest, chives. Sprinkle with sesame seeds, pre-fried.
