Eggplant marinated in ginger and honey

Ingredients

eggplant (medium) 1 PC
fresh ginger root 1-1.5 cm
honey (used chestnut) 1 tbsp
garlic 1 clove
soy sauce 1 tsp
olive oil 3-4 tbsp
freshly ground black pepper taste

Cooking method

  • 1. Peel and grate the ginger root and garlic. Stir in olive oil, soy sauce, honey and pepper.
  • 2. Wash the eggplant and cut into slices 1 cm thick. Put the pieces of eggplant in a suitable container, pour over the resulting marinade. Mix well and lightly grind the pieces with the marinade so that they are better saturated and softer. Leave to marinate for thirty minutes.
  • 3. Fry in a well-heated skillet for 3-4 minutes on each side. I was grilling. If necessary, during frying, drip a few drops of olive oil on each bite - I added after turning.
  • Serve warm with soft goat cheese, ricotta or yogurt.

Eggplants are very tender and incredibly fragrant. The combination of ginger, garlic and honey gives amazing results. Can be used as a side dish for meat or as a hot appetizer.

P.S. the exact proportions of the oil in this case are difficult to indicate - much depends on the original ingredient. I almost always get it in different ways: it is normal, then the eggplant oil is "swallowed" and I have to add it. And I don't want to add a lot to the marinade, so as not to turn out too fat.

Tanyusha, soy sauce is used instead of salt. You can fry the eggplants in a regular skillet over medium heat. The marinade takes less oil than with conventional frying.When I pour the pieces with marinade, I lightly rub them with my hands. You can immediately see how evenly they are saturated with oil, whether this is enough for frying. If the color does not change evenly, add a little oil.

You can put the slices in a shallow dish in one layer and bake in the oven. The time will be a little longer - here it already depends on the oven itself.
I usually use the oven for larger cooking. Then I take approximately the same, not too thick eggplants, cut them in half lengthwise (I leave the tails "for the entourage"). I make cross-shaped notches on the cuts, rub in the marinade and leave it for about forty minutes. Then I spread it in a very preheated frying pan with the cut down and fry for 2-3 minutes. Then I put it in a mold and in the oven I bring it to readiness.
