Cooking method

  • This recipe is not a classic, but a variation of the Chinese style.
  • Classic recipes are those that can be ordered in any Chinese restaurant around the world. And there are not so many such recipes, everything else is improvisation with various Chinese secrets.
  • Main Chinese secrets:
  • - cut finely or thinly
  • - cook quickly
  • - ingredients are prepared separately and combined only at the very end
  • - some ingredients are either fried or soaked in sauce. Rather, when soaked, it is a marinade, but the composition may be the same as the sauce.
  • So here is the most common sauce / marinade: soy sauce + starch + sugar + water. Most often, cooking wine and / or vinegar and / or sesame oil are also added. Sometimes also red pepper, ginger, sesame seeds. Such a classic version can be seen in other recipes that I previously laid out.
  • But about another classic version of the marinade, where the base is egg white, I have not yet talked about. I chose eggplant as the star of the recipe - no less classic vegetable for Chinese cuisine. Plus, the protein marinade suits him very well. Potatoes are also interesting with him. Because it is also a nightshade vegetable. But zucchini, for example, I do not like in such a marinade.

  • By the way, in this proverb, the hieroglyph Tao 道 (path, treatise, teaching, idea, doctrine, speak, and many more meanings) is the very Tao, which is Taoist, Taoism, etc.
