Elena, try first to bake bread according to recipes that are based on sourdoughs, we have a lot of them here on the forum, over time it will be clear how and what you can already experiment and add sourdoughs to any favorite bread recipes.
For example, here is a recipe for sourdough milk bread, look, try, watch out for the bun (so that you don't smear the bottom of the bucket when kneading, you can add a little flour)

https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=168910.0

I have already played enough with sourdoughs, I bake with fresh yeast, I don’t even remember how and how much I added (I wrote down my recipes somewhere, but I’ll hardly find it) The main thing is that the sourdough is good, strong and the bun is correct when kneading, then everything work out. Good luck!
Rottis
Irina, thanks for the detailed answer!

I looked at the sourdoughs - I'm worried that I won't keep up ... or I forget or go on a business trip ...

And is fresh yeast like before, which was sold in stores?

What is their ratio with dry?
vernisag
I really like these, they are in the "five", "Auchan", maybe elsewhere they sell

Bread Maker Stadler Form Baker One SFBM.990, Two SFBM.9900

Compressed yeast is a baking tradition that has been passed down in many families for many years. Yeast "Lux" 100 g - pressed "live" yeast with good lifting force, so the airy dough turns into fluffy and tender baked goods.

Natural product: Lux yeast is of high quality, environmentally friendly, does not contain preservatives.

Universal application: suitable for cooking all types of pastries and drinks (including kvass).

Success guarantee: yeast "Lux" has good lifting power, so the airy dough turns into a fluffy and tender pastry with a golden brown crust, delicate aroma and unforgettable taste.

Fast and economical use: dissolve in warm water or milk (100 g per 2 kg of flour).

Shelf life: 30 days at temperatures from 0 to + 4 ° C.

Proportion for uncooked yeast dough
For every 100 g of flour, there is usually 5 g of fresh pressed yeast
500 g flour = 25 g yeast, 1 kg flour = 50 g yeast. (For a bread machine, take almost 2 times less fresh yeast, and for a muffin - more).
Replacing fresh yeast with dry yeast
Standard replacement ratio: 1: 3 (10 g dry = 30 g fresh). One teaspoon contains 3.5 g of dry yeast, therefore - 1 tsp. dry yeast = 10 g fresh, 1.5 tsp. = 15 g fresh, 2 tsp. = 20 g fresh, 2.5 tsp = 25 g fresh.
Fresh pressed yeast is a grayish brown briquettes containing about 70% moisture. Before use, such yeast must be dissolved in warm water (30-35C) without salt. Fresh yeast can be stored in the refrigerator for about 2 weeks or in the freezer for 2-3 months. If the yeast has darkened or has formed on it, it is best to discard it. Fresh yeast is often used for baking bread, cakes, croissants, that is, for doughs that require prolonged or repeated proofing.
vernisag
I use 12g of fresh yeast per 500g of flour (wheat) bread dough (1.5hl saf-moment = 12g fresh), sometimes a little more if the yeast is not quite fresh. For butter dough for pies, 20-25 grams per 500 grams of flour. I always have yeast in the fridge and freezer. I take it out of the freezer in the evening, put it in the refrigerator (in a whole package), by the morning they are as fresh.
vernisag
And there is a slightly different sequence for laying in a bucket of a bread machine. Stir yeast with sugar in a liquid and pour it into a bucket, on top of flour, salt, oil. The yeast should not come into contact with salt and oil when laying.
With dry ones, the opposite is true, first liquid with salt and butter, flour on top and dry yeast (saf-moment) and sugar on the flour.

Good day everyone! Not so long ago I became the owner of a bread machine! I've been going for a long time and now I decided! The result exceeded all expectations! Very happy and not only me! While cheese bread was baked, French and something like Easter cake! Ingredients strictly on the scales, recipes from the forums! Thank you all, very tasty! I want to ask experts: when I press the control buttons, the actions are not performed on the first try! Either you need to stupidly press and hold, or make repeated presses! Is it just me or my fingers are gnarled! ??? I am very pleased with the stove, the bucket does not jump out, the bread is pulled out easily, the kneader remains in the bucket .... Is it really a marriage? Thanks everyone!
Sherif-Shamrin
Greetings to all owners of the miracle of the stove! I want to share a little my impressions of owning this unit! The stove is in use for only a month! It took a very long time to choose among the mass of proposals! But the choice fell on her Stadler Form Baker Two SFBM.9900. At the moment, everyone is happy! Above I asked about the problem with the control buttons, it turned out that I have gnarled fingers! The oven works with a bang! Bakes, the batch is quiet enough! The dispenser works quietly and most importantly, it closes back! The backlighting of the screen and the internal space is very convenient, it turns off by itself .. The bucket does not pop out .... Sometimes, when kneading the dough, you have to scrape flour from the corners, not always and this is not critical! All the other pluses just overshadow those minuscule minuses. Very satisfied! Recommend. Purchased for a promotion for 7999 rubles! Price and quality are on par!
Vishenka999
Girls, tell me her dimensions please!
sazalexter
Vishenka999And immediately are there buckets and shovels on sale ...
Vishenka999
In my opinion, one of the few where there is a small bread weight of 500g and a dispenser.
Vishenka999
Nobody answered.
Well, okay, I bought it!
Its dimensions are smaller than even stated in the passport.
Bottom 27 cm, to the top it expands to 32 cm (with attachments at the back, without attachments 2 cm less). Width 38, height 33.
She sat down well on my wide windowsill, took her to replace baby Moulinex.

Maybe someone will need the information - the price for it is a stock in the Corporation Center 3590 !!!! In my opinion, an incredible discount, and even in the city we have almost no place. And so I already looked at LV for 8-9 thousand, and then I saw an advertising brochure, I decided to take Stadler.

I want to buy a Stadler Form Baker One SFBM.990. How is it quality?
AlexandraK
Goodnight)
also interested in quality, whether there are bad reviews. and did not understand what is the difference between 990 and 9900 - only the color of the case? the functionality seems to be the same, and both there and there the body is written in plastic. I ordered a center 990 for myself in the corporation, the prices have now risen, and the cheapest, judging by the Yandex market, is there - 5990r (also according to the action, as well as the type of 7990r), I found 9900 for 7950r, but on the contrary, I am more interested in the white case, my favorite cartoon is LendLife too little white. and such a question, can it be installed under a corner cabinet? -will hot air go to the lockers?
Rottis
Goodnight! I have SF Baker two 9900. The stove is a year old. The body is partially metal. There are no questions or complaints. It bakes perfectly, the bucket does not pop out anywhere (it was previously seen in reviews), the folding spatula behaves perfectly. The dough kneads perfectly. The difference from 990 I don’t know what, I haven’t seen one)
Vishenka999
AlexandraK, hello fellow countrywoman!
My bucket pops out and turns 30 degrees. The baking is the same as if it had not popped out. Therefore, I do not consider it a disadvantage, it does not interfere at all.
It does not work very loudly, everything bakes perfectly, is fully automated due to the dispenser (how I missed it in Moulinex!)
The biggest drawback is the smell of plastic when baking. Honestly, I didn't expect such a trick. The first few times there was a very strong smell in the whole apartment, now it is much less, so I hope that it will pass. In Moulinex, the aroma of bread lingered throughout the house, but here there is only a little smell of pastries.
And how are you? Does it smell?

For the most part, I bake in the oven in a glass form, in general, I use a Teflon bucket to a minimum, if there is no time or I am very tired.
AlexandraK
I haven’t bought it yet, but I decided to watch the Panasonic and the stler live, to compare, after the recall that after a year and a half the shafts are flying, it’s a pity to take it for 6000, I’m thinking about adding to Panasonic, I’m facing a choice - do I need a raisin dispenser? - why not throw it with all the products at the beginning of the batch?
Jiri
Quote: AlexandraK
why can't you throw it with all the products at the beginning of the batch?
the raisins will be kneaded into fluff and dust, the color of the roll will be just gray
AlexandraK
Clear. In general, this dispenser is a necessary function - do you use it often or once a year? Just the difference between with him and without 2tr
Vishenka999
I always use the dispenser. I put linseeds and nuts. At the beginning, you cannot fall asleep, if only because the bowl will be scratched.
Compare yourself - either manually add in the middle of the proofing, or the dispenser will work by itself, you may not even be present at home.
I don't think it's worth saving on this
Jiri
AlexandraKIf you do not plan to put the dough on the timer, for the night, for example, with baking additives, then you can do it without a dispenser, I have a squeaker function in my x / p, when to add ingredients (raisins, for example). And if for breakfast there is a bun with raisins, then .. See according to your options
AlexandraK
Just a year ago the same Panasonic cost 6,000, and now 12,000, for me the difference in the decree is very significant, but I don't want to take something that can break in a year ((an official Panasonic dealer in our city has a model 2502 (a yeast dispenser and a dispenser for dried fruits), and can bring 2510 (without dispensers).

AlexandraK
I plan to bake bread every other day, with raisins only muffins and cakes, but not regularly, from additions to bread, only fried onions sometimes (is it possible to put it in a dispenser or fatty is not worth it) and my husband does not eat seeds
Jiri
Alexandra, Or rather, when you play enough, you will mainly use only the dough kneading function. Without any dispensers
Vishenka999
Jiri, that's not true. I gave the first HP Mulinex to my mother. I was looking deliberately with a dispenser, maybe it really bothered me to watch the moment of filling the seeds. And I always pour them. So put the dough - and get busy, even go to the shower. And now it saves me if I'm tired or put baked goods at night.
It's another matter if the husband (as the main consumer of bread) does not eat with seeds, then there is no need for him.
Vishenka999
It's just that when you make a large purchase, what can be exchanged for 2000 rubles, you need to take a full set.
AlexandraK
So it’s so, but I’m not sure that the function I need, but I don’t want to overpay for something that will not be used, I love cupcakes with raisins very much, but often you won’t make them, and soon babies will be born and raisins will not be possible, but children pick it out
Jiri

It is clear which is better. But if it’s a money issue, but I want a panasonic .. I did not bake bread in cotton for a very long time, now I mainly knead the dough in it.
Vishenka999
Would have written a little earlier, I had a 1000 r discount in M-video
Did you compare prices everywhere?
AlexandraK
Compared in mvideo for 500r more expensive than the official dealer. I haven't bought anything yet, right now I'm going to touch it in mvideo

Can you bake sourdough bread in this bread maker? It seems to have a manual mode.

Hello, if you cannot correct the accuracy in the recipe, can you write now ..... For a whole year I chose cotton, my godfather gave her Kenwood350 sample, I got bread there, but she didn’t have it .... Now I decided and bought myself x / p Stadler Form Baker Two SFBM.9900 ..... now I'm sitting wondering how to bake according to your recipe, but a lot that is not clear to me, I understood the crust 3-4,What weight should I put... And one more thing: I always use the yeast separately in a cup of water + sugar, and I always use boiled water at room temperature, and you write simple water. Please clarify these unclear things for me ???!
vernisag
Alyonka, weight 900g, fresh yeast can be mixed with water and sugar (or you can just put water, sugar, then flour, oil and salt in a bucket of hp), if dry (1.5hl), then just pour it on top of flour. The water is just warm, not necessarily boiled, and add a little more than is written in the recipe, honey. on 10 .

Good day. Somehow this branch has undeservedly wilted. We need to fix it. Recently acquired Stadler Form Baker Two SFBM.9900. We read about the possibility of "jumping out" the bucket, but somehow it didn't scare me too much. Thoughtful management, reliability and predictability of baking are more important. I think that the stove has all this, at least the first experiments were successful. We have already baked 4 breads according to different recipes, everything is more than great. The "roof" of the village is only in one, and that is more likely due to the fact that they forgot to add salt. All recipes from this forum without reference to the brand of the stove. They also took a dough recipe for pies and dumplings from here. Here everything worked out 5+. True, the dough was kneaded hard, you need to add more water and butter.
In general, so far the impressions are the most positive. It is convenient to use. The backlight and the auto-closing dispenser are nice bonuses. We haven't reached the author's recipes yet, but I already want to try something of my own.

Hello dear forum users! Two years ago, I purchased a Stadler Form bread maker and got acquainted with a whole series of malfunctions that this mechanism can give out, starting from the notorious "popping a bucket". He successfully overcame them all and even improved the bread maker, expanding its functionality and increasing reliability. If anyone is interested in this topic, I can share my experience.

Share - we are very interested to know the intricacies of operating a x / stove
It is advisable to do this in this thread

guest 3, of course share! extremely interesting. Even intrigued by the expansion of possibilities)
On my own I only encountered a bucket popping out and then in the second year of operation.
No more complaints. Everything is fine!

Hello dear forum users! I was not going to buy the Stadler Form bread maker, but when I saw it in the store, I looked at its characteristics - I decided this was what I needed. And she made me happy with precise work and high-quality baking. I used it to the fullest with the expectation of identifying possible defects and then returning it to the store.

A couple of weeks later there was a "popping out of the bucket". By that time, I already knew about this phenomenon and observed how, during operation, the effort to turn the bucket decreases when it is fixed. When everything happened, I began to deal with it. To my surprise, I discovered that the bucket was held back from reverse rotation in the fixation unit only by the friction force created by the rubber gasket under it. In my opinion, this is a rather dubious technical solution. Under stressful operating conditions, this rubber pad could lose its elastic properties and did not provide the necessary force to hold the bucket. The transfer of the production of bread makers to China may have contributed to this rapid outcome. I was already used to the bread maker, I didn’t turn to warranty obligations - I decided to "bring it to mind" myself.

When considering the consequences of "jumping out the bucket", I decided that there was a possibility of contact with the heating element. During baking, this could damage the non-stick coating of the bucket. The solution to eradicate this phenomenon was found very quickly. On the wall of the baking chamber, using two screws that secure the frame of the backlight window, I fixed a small UPR made from a piece of galvanized steel. When installing the bucket, the bent up end of the darling of the bucket passes over the stop, and when the bow is lowered to the horizontal position, it rests against this stop.No more "jumping out" was observed. Unfortunately now I can not post photos of this device. I will do this later. Then the dispenser stopped working for me ...

guest 3, thanks for the information, in general it is clear even without a photo And to continue the "romance" again need amicable requests ??

Good afternoon, dear forum users! When I realized that there would be no more raisin rolls, I had to take care of the dispenser. The dispenser itself is just a box with an opening bottom. In the initial state, the bottom is held in the closed position by a latch, which is located at one end of the spring-loaded lever, at the other end there is a button that removes the latch. So if you pick up the dispenser and press this button, the bottom of the dispenser will open. It's simple. However, the actuation process of the dispenser in the body of the bread machine is more complicated.

In the bowels of the bread machine there is a board carrying a small electric motor with a toothed wheel and a toothed rack with a round pusher at the end. During the sound signal for filling the ingredients, this electric motor turns on and the pusher is pushed out on the far side of the baking chamber, about 2 cm upwards. In this case, the actions for triggering the dispenser are moved to the lid of the bread machine. There is a button in it, just above the pusher. Pressing on it the pusher lowers down the spring-loaded lever designed to close the bottom of the dispenser.

But this is still not enough to open the dispenser. It is necessary to press the button, which will remove the latch holding the bottom of the dispenser in the closed position. The transmission mechanism for the action from the pusher on this button is located in the lid of the bread machine. When I disassembled the lid of the bread machine, I was simply stunned by what was fenced in there. A slider, guides, a lever, springs and another small pusher, which presses the dispenser opening button. The bottom of the dispenser end opens and its contents are poured into a bucket. The motor turns on in the opposite direction, removes its pusher, the released spring-loaded lever closes the bottom of the dispenser and the latch clicks it into place. The beep stops. That is how it should be. But on the day when I was deprived of raisins in a bun, everything went wrong - the slider was tightly jammed.

I disassembled this entire mechanism, examined all the details, but found no visible defects. Unless the backlash in the guides seemed too big to me. I carefully assembled everything, manually checked how it works and put the bread maker into operation. And everything worked fine for a while. And then again the pad, this time with nuts. It jammed again, this time the lever. Either the designers didn’t think of something, or the Chinese workers did it — I didn’t understand any more. I threw out all these sliders, levers and installed a stop in the dispenser seat, which the button stumbles upon, which opens the latch of the dispenser bottom when it is installed. Everything worked fine, there were fewer parts - the reliability increased. But this operation is quite painstaking, you need to adjust everything very carefully. For a normal consumer, all these details are up to the "bulb".

He just needs to turn on the mechanism and get the declared result. What's the matter here? It is unlikely that the creators of this bread machine tried to limit the time of its life in this way. It turned out that the Stadler Form bread maker is like two drops of water similar to similar products from Morphy Richards, models 48319 - 48324. There is even a statement on the Internet that this is just a clone of Morphy Richards, an English company founded in 1938 and working in the field of stylish home utensils. Therefore, anyone interested can see the reviews about her bread makers on this forum. Everything worked fine for me, but lately I heard some creaking when kneading the dough and I decided to completely disassemble the bread maker. I have long wanted to expand its functions to work with leavens ...
guest 3
Hello dear forum users! As already noted on the forum, Stadler bread makers have limited possibilities for self-programming.This is due to the fact that some settings are not reset to 0 and such an operation as kneading cannot be excluded in programs 16 and 17. This is why certain difficulties arise for baking with the use of starter cultures in automatic mode. Since I had already decided to disassemble my bread maker, due to the creaking in the stirrer drive, at the same time I planned to put a switch to turn off the electric motor. This makes it possible to exclude unnecessary in this case heap from the technological process.

When using starter cultures, I always control the quality of the kolobok, adding liquid ingredients or flour if necessary. So when you get a high-quality kolobok during kneading, you could turn off the electric motor and perform the remaining cycles of raising the dough and baking in automatic mode, including with a delayed start. In this case, for example, in the evening I do kneading on the third program, until the required quality indicators of the kolobok are obtained. Then I switch to program 16 or 17. I set the baking size, the minimum values of the first and second kneading, the experimentally found values of the second and third rise of the dough, the baking time, the type of crust and the required delay start time. And in the morning, at the appointed time, I receive ready-made pastries.

If a delay is not needed, everything can be done within the framework of one program - 16th or 17th, by turning off the engine after mixing. This is about improving the bread maker. To do this, you need to disassemble it. Dismantling the bread maker begins with detaching the control panel. It is fastened with three screws on its side wall and latches inside the case. Having unscrewed the screws, you must carefully pry it off with a thin screwdriver and pull it out of the case. In the opening that has opened, at the very bottom, you can see the metal base on which the baking chamber, the electric motor and the control unit are fixed. There were several possible options for continuing the disassembly.

I decided to detach the metal base from the plastic bottom and pull out all the metal giblets of the bread machine from the body. The event promised to be protracted, so small stocks of bakery products from the Globe were made, which the next day seemed no longer edible. Having unscrewed all the screws from the top panel of the bread machine, carefully removed it. For further disassembly, a long screwdriver was required ...
guest 3
Hello dear forum users! When disassembling the bread maker, a long screwdriver was needed in order to unscrew the screws that attach the metal base of the structure to the plastic bottom of the bread machine. This length is about 30 cm. I did not have such a screwdriver, so I made it from a metal bar 6 mm in diameter. With its help, I unscrewed these screws and the clamp securing the power cord at the bottom of the case. Pushed this cord half its length into the bakery's case and put it on its side. After that, I pushed out all its metal assembly from the body of the bread machine. I did not disconnect the control panel, so it was possible to start the bread maker at idle and see the operation of its mechanisms. There was some play in the axle of the large gear wheel. Disconnected this wheel, removed the lock washer and removed the agitator drive shaft through the baking chamber. I found the cause of the creaking - because of the backlash, the rotating part of the agitator drive touched the bucket in the attachment point. This defect in itself is insignificant and the bread maker in such a state could work further. But the increasing backlash in the plain bearings could lead to serious troubles in the future. On the axis of the agitator drive, between the lock washer and the gear wheel, there was a free space and I installed a suitable rolling bearing there. To do this, I had to make a clip from a metal tube and fix it on the base of the structure. Backlash and squeaking disappeared. The mechanism worked normally when idling. If the rolling bearing takes root, I will install a second one, replacing the plain bearing with it.Since there were no bread maker schemes, I had to intuitively deal with the electric motor connection wires. Having determined the required wire, I cut it and connected a small toggle switch into the gap, which was fixed on the body of the bread machine. The assembly was carried out in the reverse order. To align the fastening holes of the metal base of the structure with the corresponding holes in the bottom of the bread machine, I inserted guide pins into two opposite holes. To install the screws, I put a rubber tube on my homemade screwdriver into which I inserted the screw heads. Despite the narrow space inside the bread maker, assembly was easy with this device. I tightened all the screws available and put the bread maker into operation. But all this took about half a day. The bread maker is working fine. Owing to the elimination of kneading, it was possible, due to the remaining parameters, to choose the optimal technological mode for working with starter cultures. Heating the dough while rising almost doubled this process. The baking quality has also improved. So by now I have almost completely moved away from any yeast. Summary - the era of "unkillable" models, together with the formation of the market for bread makers, is probably a thing of the past. This is evidenced by the high popularity on this forum of topics dedicated to malfunctions and problems of bread makers of all models, including Panasonic. There will be no eternal bread maker, it is disastrous for the manufacturer. The ball will be ruled by profitability, so you need to adapt to existing realities and pay attention to the maintainability of mechanisms.

Hello dear forum users! Regarding the "jumping out of the bucket" - I am now having some problems with the photo, so unfortunately I cannot show the stop for fixing the bucket. But it is done very simply. I took a thin cardboard with a vertical size greater than the height of the backlight window. Unscrewed two screws securing the window frame and located one above the other. I put the cardboard on the frame, pierced the holes, screwed in the screws, inserted the bucket, turned it all the way, lowered the bow of the bucket away from me and marked the position of the tip of the bow. Then, in this place, he bent the cardboard perpendicular to the wall of the baking chamber, cut it off so that it does not interfere with the rotation of the bucket when the bow is vertical. The result was a template, according to which a metal stop was then made. Then it remained to fit it in place. But all two - three hours and no "jumping out". The manufacturer has the option of a more elegant solution, but for some reason he did not use it. Recently, there have been some problems with the bucket. A backlash formed at the stirrer and the bucket began to leak. In search of a solution, I turned to the forum and looked through the relevant topics about bread makers, which have a broader history within our confines. The information received made us rethink the operating conditions of the bucket, so as not to ruin it. As you remember, the instruction recommends loading the liquid ingredient first and then everything else. Perhaps this leads to an accelerated occurrence of the above malfunctions. Therefore, for myself, I slightly changed the order of placing the ingredients in the bucket.

Alas, this is not the reason, the problem is in the design and the materials used, this is the trouble of all HP with an open oil seal. Good people, please share the recipes for Easter cakes (pasoches), and rye / rye-wheat bread for the Stadler Form HP that you got in this HP.
I bought this statue of engineering a month ago. There are many moments of factory marriage in terms of mechanics. I also solved these issues on my own, but in much simpler ways than uv. guest 3 (for which many thanks to him). I will describe later as soon as the time appears.
So far, if you can, help with your recipes, because you really want to cheer yourself up. And not only is the bread maker not working correctly in the stock, but I still can't get the hang of baking recipes from the Internet on it.
