Tanya, everything is perfectly cooked at a single speed. Except that it can be critical for baking. And for the rest, different speeds are extra bells and whistles. Purely IMHO, of course. But in a year and a half, I have never felt a lack of a speed switch. And, as far as I know, girls bake quite successfully at the same speed, I just never had such a need.
