But I can't save the soufflé, I bake an hour at 120 gr. and the time of "not opening" without heating I withstand, it bakes well, and then settles before our eyes, and it seems to taste not raw, but the bottom always turns out with cracks, I'm afraid that it is fried. What to try: lower the temperature and increase the time? and how to check readiness without taking it out of the bowl?
How to cool and get the soufflé properly? Immediately after aging, I take it out of the bowl onto the lower steamer, and this is the most "crooked" moment for me ...
