Pies in a frying pan

Ingredients

Wheat flour 4 tbsp.
Milk 1 tbsp.
Salt pinch
Margarine 120 g

Cooking method

  • Glass per recipe = 250 ml
  • Melt margarine and cool until warm. Add milk, salt and flour. Knead an elastic dough.
  • Form pies:
  • I immediately divide the dough into 16 balls, and take one at a time. Roll out a thin circle from the ball (the thinner, the better, and add very little flour), put the filling, and fold in half. Pinch the edges and you get a pie in the shape of a cheburek. Fry two pieces in a little oil in a skillet. Even if you cook pasties from this dough, do not pour too much butter, there is no need.

Note

I love these pies very much, with any filling. The dough is very good at work, does not break, does not burn when frying. Ready-made pies are not greasy, crispy, juicy.

Today there were two types of pies - one with plums and the other with cottage cheese.

Lydia , I cut the plums into slices and sprinkle with a little starch ~ 1 tbsp. l. When I put the filling on the dough, I sprinkle it with sugar quite generously. Even if the pie sticks apart along the seam, the filling will not flow out 100%.
For example, I put apricots in halves, and sometimes I add a few cherries to them.

These pies stuffed with feta cheese and greens are very tasty.

And it should also be delicious with potatoes (boiled potatoes + raw onion through a meat grinder).

Glass = 250 ml.

Structure:
30 gr. fresh yeast
2 tbsp. warm water
4 tbsp. flour
3 tbsp. l. vegetable oil
1h l. salt
sugar from 1 tbsp. l. up to 3 tbsp. l. , to taste (depends on the filling of the pies)

Preparation:
Dissolve yeast and sugar in water. Leave for 15 minutes. Then add salt, vegetable oil, flour and knead the dough.
The dough is very soft. Place a bowl of dough in the refrigerator. I put it in a glass bowl and watch - as soon as the dough rises 4 times, I take out and prepare the pies.

I roll out the dough quite thinly, put the filling. I leave the semi-finished product to lie on the table for about 10 minutes (while I'm sculpting the rest of the pies), and fry it.
Very good pies turn out, we love.

After cooking, I also do not cover with a lid, then the dough remains crispy. If you like a soft crust, then place the hot cakes under the lid.

When I was studying in Moscow, I very often went to a cheburek house, and all the time I asked myself, why only with meat? P.S.It took a couple of tablespoons of vegetable oil to fry 17 pies. The pies were with potatoes and fried onions, with mushrooms, and sweet: with nectarine-coffee jam and with a feijoa berry grated with sugar.
I put a lot of fillings (except for sweet ones), twice as much as the dough. I got 60 grams. dough-120 gr. potato and mushroom filling. The dough filling test passed "with a bang!" !!!
