We don't have the Rye bread mode, like the author of the recipe, so I baked it like this (not my idea, I read it on the forum):
First, the Dough mode - 1 knead 20 minutes before proving, two good koloboks formed on each mixer: not dense, terribly sticky, with a puddle at the bottom. Turned off HP. At this stage, it is better to immediately pull out the stirrers, otherwise I did it already when the dough rose ... and because of this the dough fell ... and I had to wait a while for it to rise again.
Then she covered the HP with a blanket and put it to the radiator (it is cool at home), after an hour the dough rose and increased in size 2.5 - 3 times.
I switched on the HP to the Baking mode and after 60 minutes I got out this wonderful bread !!! Good luck to all!!!
