Cooking method

  • In our family, men prefer this cake. And it is really very tasty, soft and cherry ... I found similar recipes in different sources, but this cake is different in that there is no yeast here. And I really like it.
  • Filling:
  • First of all, we prepare jelly. Bring the juice from the cherries, sugar and vanilla to a boil. The juice should have a pleasant sweet taste. Add diluted starch to boiling juice, stirring vigorously. You should get a thick jelly. Add cherries. Stir, cover and cool.
  • Dough:
  • Heat the oven to 175C.
  • Prepare a split form ø25cm, oiled and dusty with flour.
  • Mix cottage cheese, sugar, milk, vegetable oil, salt, lemon zest.
  • Sift flour with soda onto the curd mass.
  • Knead a soft dough.
  • Roll out the dough into a layer of 30-50cm.
  • Lubricate with thick cooled jelly with cherries, roll into a roll along the length, cut into 12 pieces about 4 cm wide. More than 12 pieces are not needed - they will not bake.
  • Put the resulting rolls in the form, cut up. They should not fit snugly against each other.
  • The rolls can be unrolled the first time. This is permissible. When baking, each roll will enlarge and fall into place.
  • Dissolve the yolk with cream, grease the top of the pie.
  • Bake at t175 * С. After 30 minutes, the dough is leveled and rises 2 times. Furnace 45 min. Although I baked for over an hour. So take a look at your oven.
  • Do not open the door during baking! Check readiness with a wooden torch. It should come out of the dough dry.
  • Rosenkuchen cottage cheese pie with cherry filling
  • Pie is very popular in my family.
  • Enjoy!

Natashawhat a cool thing!
Cottage cheese is my everything!)))
We are still impressed by Klekselkuchen, and now another Kuchen has appeared.
I will definitely do it and show it soon!)))
AlenaT
Natasha, vanilla extract ... (((
And what else is possible?
Tasha
You can and ... you can do without vanilla ...
AlenaT
Nooo, without vanilla in any way!
One smell is worth it!
So, we will put vanillin!)))
Tasha
Alena, where is Klekselkuchen located?
AlenaT
Natasha, in the same topic "Baking with filling", on page 4!)))
Called Klekselkuchen Pie)))
Ilona
My personal account is already breaking from bookmarks - a whole library!
MariS
Nata, I feel the pie is very, very tasty !!! Thank you! Bookmarked!
Tasha
Alyona, Klekselkuchen is interesting there !!! Thank you! I have it slightly different ... but there are many varieties ...

Ilona yes, I also have so many things - you can't change everything in my entire life ... so you need to choose the most, very ... You need to do everything ... life is short .. and other things are still waiting, even more important ..

Marisha, if everything is done correctly - the cake is magic ... did you notice? - dough without eggs ...
There is a little skill you need when you put dough rolls on the mold .. you need to get used to so that they do not disperse much, you need to work faster at this stage ...The dough should be tender ... the filling will come out a little and stain ... But this is normal ... But in the end, beauty turns out, but delicious !!!! Cherries are juicy, very sweet and go with the dough ... So I recommend ...
AlenaT
Natasha, so you put yours too !!! Let's try!
We really liked that one!)))
Merri
Fresh cherries are ripe. You can also bake from them.
Tasha
Alyona, if necessary, I'll post it ....

Merri , of course ... I also adore the cherry season ... I try to close the compotes as much as possible, and entirely for desserts ... because this is a unique berry ... So now, I just fiddle with cherries ... all at once, as usual, not a drop of pity for the "mistress"
But for the cake you need to cook compote with fresh cherries (with sugar). This is necessary, so the taste will be softer, the excess acid will go away ...
AlenaT
Natasha, I did it!
How delicious it is!)))
I'm glad I was not mistaken about it.
The cottage cheese was old - 300 grams spilled, Cherry went to its own juice-liter jar.
I rolled out one plate - the filling already climbed out, lay down thickly)))
Only 7 rolls lay in the 24 cm form, they turned out so wide)))
I made another form for three pieces, only 10 rolls turned out.
When baking, they parted in breadth, they did not rise in height (I did not increase the soda).
And although it was baked into one pie, I liked that it can be divided into "spare parts" and you get separate pies!)))
Tried first hot, and today cold.
Well, sooo, very tasty!
Although outwardly yours is prettier!)))
I will definitely take a photo next time.
Tasha
You can safely put less flour next time ... if you want such an effect as mine ... I didn't break it in separate pieces ... You could only cut it with a knife ... This is because the dough was very soft ( it could even be sticky ... you know ...) And even the rolls turn out to be so ... unstable, crawling to the side ... you need to get used to installing them ... And it tasted the most delicate ... my husband loves this cake very much.
Glad I liked it!
AlenaT
My dough also turned out very tender, but not sticky, of course.
And I also put them a little at a distance, it will be possible closer.
And cherry with lemon is generally a win-win combination.
Tasha
I agree 100%
Ilona
Natasha, how can you make this pie with fresh berries? Well, I don’t have cherry compote, I only have jam. But it's with bones, so it won't work. And the cottage cheese is lost for the fourth day. I want to adapt it to the pie! Need a hint!
AlenaT
While Natasha is gone ...
ilonnna , it seems to me, you can cover fresh cherries with removed pits with sugar and hold it a little
(or better for the night in the refrigerator).
By the morning you will have enough juice for jelly ...
Tasha
Make compote from fresh berries, but only sweet and do not need to cook for a long time. The jam is not suitable ... And I just closed the cherries for the winter, 5 minutes for the fillings entirely in my own juice .. pitted ..
Aprelevna
Girls, and I'm somehow afraid of using cherries with seeds .... who thinks about this?
In the spring we were visiting relatives in Ukraine, so they gave us all kinds of jams, and so among these jars
there is one large cherry jam with seeds and a compote with seeds.

I like to use cherries everywhere, and in torts, in pies, I buy in the store - it's all pitted there, like compote, like ice cream,
I saw this recipe, very good. I want to cook
but I cannot get rid of the thought, which I have heard for a long time, that it is dangerous to use any preparations from cherries with seeds,
something about hydrocyanic acid there .....
So I think where to attach these banks ??
Tasha
The bone has its own excellent tart taste and aroma !!! I'm not afraid to use jam or compote within a year ... During this time we eat stocks of this kind ... and if the shelf life is more than a year, this can already be rejected ... But, for example, calibrating an apricot stone is eaten with pleasure everything, without fear of poisoning ... and she also has a single dose limit - no more than 10 nucleoli at a time .. And we, I remember, crunched, in my opinion, with lethal doses ...and nothing - alive and well ..
Aprelevna
I am convinced many times that EVERYTHING is in our heads
Tasha
Yes, I agree, everything is needed philosophically ... everything is relative ... the world by itself does not bear any good or evil. In my opinion, he is indifferent to the person! And everything that happens around us is just a reflection of our thoughts, feelings, actions ... So if you are afraid of poisoning with hydrocyanic acid, then you will definitely get poisoned ... not from cherries, but from eggplant, for example ... Fear! It is he who attracts all the inconsistencies!
Omela
Oh, and we have compote and it costs more than a year .. and nothing. TTT Etozh lope must be drunk at a time to get poisoned ??
Tasha
Honestly, we don't have a pitted cherry compote ... and it's not difficult to separate the bones from the berries ... the compote can lose its taste ... The cherry compote in my family is a favorite ... we drink in buckets ...

Super! Delicious. The last time I did this was in 98.
In general, it means I need another recipe, for fresh berries! And then boil compote, boil jelly ... do not ... nm need to quickly, and what would be tasty - the child is very sick (39 again, the second wave in general ... or the complication has gone. The doctor herself does not know this or that and wants us shut up in the hospital, but we do not give up!) So there is no time and energy to bother with the cake. Express is needed. Maybe I'll think of something, so that the little one can somehow please when the temperature drops.
Ilona
Natus, I did it !!!
Certainly far from ideal, but delicious ... umm ...
Thank you!
That's just nifiga, I didn't manage to roll a roll. It sticks to the table, does not fold, tears. Uff .. and I was worn out - the crooked one. I put the spare parts into the mold as best I could, coated them in the oven!

Tasha
It didn't work with the roll ... it was necessary to dust it with flour ... it should be soft and ... when you quickly work with your hands, dusting the board with flour ... then the dough does not have time to grab ... the main thing is to somehow quickly roll over the dough. .. it's hard to explain .... you need to do a master class.
Ilona, the first time I didn't get a cake at all ... but I saw it in the picture ... and decided to do it again ... the second time - it turned out great ... I didn't regret my persistence ... So what is needed feel the dough ...
You have not regretted the cherries! From the heart!
I am very glad, well done, for the recovery of the pencil kids!
Ilona
Of course I didn’t regret it! Cherry pie! So there should be a lot of cherries, otherwise it is not tasty when one comes across two. It turned out just right to my taste, using less! And my jelly was made from mashed currants and strawberry juice with sugar (more precisely, what came out of the strawberries covered with sugar). Vichy left fresh in hot jelly. It turned out very good. delicious! But of course not beautiful. Nobody will give up the master class, only you first recover, time will appear, then you will do it. I would also like to understand from what amount of liquid you cook jelly? And then a liter jar of compote is not entirely clear, because someone closes the compote chock-full of stuffing the jar, and someone only 1/3 of the can.
AlenaT
In-in, I support !!!
I had a maximum of a glass of liquid, or even less)))
I opened the cherry in my own juice)))
Tasha
My 1 liter jar with compote looks like this: the cherry is 3/4 full, and the juice is almost up to the throat ... If there is little liquid, add water to the desired consistency of thick jelly.
Ilona
I had a glass of liquid somewhere, well, one and a half! And berries .... !!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
I will definitely do it! As soon as I drive the elder for cherries

Yes, Natasha! I don't recognize pitted cherry jam at all! I love jam with seeds from large fleshy berries! And without them it is also delicious, but something is missing - the taste is different. And sometimes we have a stuck jar for a single year, and no one has been poisoned even once! Neither jam nor compote. And as a child I remember they rented a house in the south, so there the hostess filled up the whole yard with apricots, they just poured them into the baths and karyts! everything was in apricots! And they made pitted apricot jam, but they added apricot kernels. So, as children, we sat with hammers and hammered these bones with such pleasure! We had a lesson and a game, and how many we ate .... you can't count. Even though we were told: "Don't eat a lot, you can't!" And they secretly piled up all the same.
Tasha
What pleasant memories from childhood ...
Ilona
Tusik, hello !! Today I baked your cake at the request of my son-in-law! Vkusnyatinaaaa Thanks again !!!
