Envelopes with wild garlic and sweet pepper

Ingredients

Dough:
flour 300 g
milk 130 ml
fresh yeast 8 g
sugar 2 h l
salt o, 5 h l
egg 1 PC
sour cream 1 tbsp
Filling:
wild garlic 2 bundles
bell pepper (yellow) 1 PC
chili peppers (fresh) 0.5 pod
salt taste
dill 5-6 branches

Cooking method

  • Dough:
  • - grind yeast with sugar and leave for 15 minutes;
  • - combine flour, lukewarm milk, egg and salt and knead the dough for 3-4 minutes; add butter soft butter (not melted) and knead until smooth;
  • - add sour cream and knead for a couple of minutes - at the end of the kneading, a soft, slightly smearing bun is obtained.
  • - leave to rise for 60-75 minutes.
  • Filling:
  • - bake sweet peppers in the oven until they are tanned, peel off skin and seeds, cut into cubes;
  • - finely chop the greens, combine with baked pepper and finely chopped chili, salt.
  • Roll out the finished dough to a thickness of 0.3-0.5 mm and cut into squares with a side of 8-10 cm. Lay out the filling, form the envelopes and leave for proofing for about fifteen minutes.
  • Bake in an oven preheated to 180 degrees for 15-20 minutes. Brush with yolk before baking.

Olya, the recipe is of course seasonal. And salted wild garlic, probably, as fresh does not smell. But it is quite possible to do it now - add basil, parsley, some olives and a bit of garlic to the pepper. The result is the Mediterranean version.

And I do envelopes like this - the dough is cut into squares and opposite corners are connected with a "handkerchief", all four corners are fastened together. I twist them with a flagella, pulling them up slightly, and then just crush them. It turns out a tetrahedral pouch. The side cuts should fit snugly against each other. For reliability, you can immediately grease them with yolk and put on proofing. And before baking, grease the envelopes completely.

P.S. If desired, it is quite possible to add 15-20 g of butter to this dough, slightly reducing the amount of milk or sour cream.
