Maestro pies

Ingredients

Dough:
flour 500 g
milk 230 ml
fresh yeast 15 g
eggs 2 pcs + 1 pcs
sugar 30 g
butter 60 g
olive oil 1 tbsp
salt 10 g
Filling:
pork (not fatty) 500 g
bulb onions 1 PC
eggplant 0.5 pcs
Bell pepper 0.5 pcs
chili pepper (fresh, small) 0.5 pcs
garlic 3 cloves
parsley, basil 3-4 branches
butter 20-30 g
olive oil 1-2 tbsp
spice mix for meat 1 tsp
freshly ground pepper mix taste
salt taste
cream cheese 1-2 tbsp

Cooking method

  • Prepare the filling:

  • - peel and cut vegetables into very small cubes;
  • - clean the meat from films and tendons, grind into minced meat;
  • - pour a spoonful of olive oil into a preheated frying pan and toss the garlic cloves. Fry over high heat for a couple of minutes and remove it from the pan;
  • - put the chopped eggplant and fry over high heat, stirring constantly for about five minutes. Remove from the pan and set aside for a while;
  • - now we fry the onion over low heat until transparent, add both types of pepper and simmer for a couple of minutes;

  • - put the minced meat on the onion and pepper, return the eggplant. Add the remaining butter (both butter and olive), herbs, salt and spices. We fry everything together for about ten minutes.

  • - completely cool the finished filling and stir in the cream cheese.

  • Prepare the dough:

  • - grind yeast with sugar and leave for 10 minutes;
  • - sift flour and combine with salt;
  • - Drive eggs into lukewarm milk and stir;
  • - combine the indicated ingredients and knead the dough at medium speed for five minutes;
  • - add butter of a plastic consistency and olive oil and knead for another 3-5 minutes, put the dough to rise for an hour.

  • Roll out the finished dough into a layer 3 mm thick (lightly dust the cutting mat with flour) and cut out circles with a diameter of 10 cm.

  • Brush the edges with protein and shape into patties.

  • Brush with yolk mixed with a couple of tablespoons of milk.
  • Let it stand for about fifteen minutes and bake in an oven preheated to 180 degrees for 15-20 minutes. Brush with the yolk mixture again before baking.

For some reason I can't, the dough creeps up and crawls into the mixer. Share your experience. I don't want to take out a bread maker for dough

Lyudmila, this dough is actively wrapped around the whisk. So I just change the angle by turning the mixer "left-right" etc. and the dough goes down. By the end of the kneading, a soft, pliable bun is obtained.
I'm used to my mixer, I have it as an extension of my hand - I always feel that the dough "wants" (so to speak).

In my old Polish mixer, the dough attachments had different color skirts and, accordingly, inserted in place. For example, red and white. And look for a nest with a red rim.
Otherwise, it will crawl up.

Now, if my mixer breaks down, I will take this nuance into account.

Today there was a reason, so I did it. The pies are still smoking. And it turned out ... as many as 34 pieces.
The dough was kneaded by a bread machine, I just ground the yeast with sugar. The filling of my pies is pork. liver (300g) + a lot of onions (5 onions) + carrots (1 pc) + parsley = overcooked everything. And I made a few more pies with cottage cheese and dried apricots + sugar.
I liked the edges of the pies very much, but I only have my favorite dumpling maker, there are no other devices. She shaped and sculpted it. The fact that it turned out made me very, very happy.Now I will have such pies. in favorites. Baked on convection 180 degrees, 15 minutes. Here, in the heat of the photo
