Ingredients

beef (pulp) 1 kg
bulbs 2 pcs
rye or borodino bread 2 pieces (100 gr)
honey gingerbread 50 g
sugar (honey) 1 tbsp. l.
rast. oil 3 tbsp. l.
tomato paste 2 tsp
mustard 1 tsp
Bay leaf 3 pcs.
black peppercorns 5 pieces.
salt taste
Optional:
prunes 100 g
raisins 50 g
cinnamon 0.5 tsp
carnation 1-2 pcs
garlic 2-3 slices
herbs-condiments 1 tsp dry

Cooking method

  • Esik-fleish (sweet and sour meat) is a dish of Ashkenazi cuisine. It appeared in the Jewish diet in the Middle Ages and became one of the iconic, distinguishing cuisine of European Jews. Initially, this is the kitchen of poverty, it often uses sugar, fruits, and bread. This is understandable: in those days there were many children in families, and in order to feed everyone, housewives added components that increase the mass and enrich the taste of the final product.
  • 1. Wash, dry and cut the beef into small pieces.

  • Peel the onion and cut into small cubes.

  • 2. Heat oil in a frying pan and fry the meat over high heat for 10 minutes. Transfer to a thick-bottomed saucepan (or multicooker).
  • In the same pan, fry the onion until golden brown for 7 minutes. Add the onion to the stewpan to the meat along with bay leaf and pepper (at the same time add prunes, cloves and cinnamon). Pour in water (I had chicken broth) so that it covers the meat by two fingers, and simmer under a lid over low heat (or in a slow cooker, Stew mode) for 1 hour.
  • 3. Add sugar, salt, tomato paste, mustard, diced bread and gingerbread.

  • Simmer, stirring occasionally, for another 20-30 minutes.
  • PS From the list - at will - I added only herbs, and still it turned out crazy delicious! Onions, bread and gingerbread dissolve in boiling water to form a thick sauce.
  • I served green beans for a side dish.
  • Boil (simmer) green beans for a short time, only 5 minutes, throwing them into salted boiling water. It takes even less time to cook frozen green beans - 2-3 minutes. If you are steaming green beans, keep them on longer - 8-10 minutes.
  • Add some citric acid to the water to keep the color bright. After the specified time has elapsed (or simply, when the beans are easily pricked with a fork), fold it into a colander and pour cold water over it. Thanks to this, it will not fall apart.

I wanted to say about Jewish cuisine (say a word about the poor hussar). I watched the program with Boris Burda - and he was preparing false fish guys, this is something !!! The composition of the products is minimal - onions, potatoes, but with the right technology, as if you were eating fish. So, I believe Ghana that it is delicious and satisfying.
