Jubilee Pie (Viennese Pastry)

Ingredients

Dough:
flour 250 g
milk 200 ml
fresh yeast 12 g
Dough:

flour 150 g
butter 50 g
sugar 50 g
eggs 1 PC
Extraction:

butter 75 g
sugar 50 g

vanilla 1 p
salt 0.5 h l
zest with a quarter of lemon
poppy 2 tbsp
rum 1 tbsp
Filling:
frozen cherries 100 g
dried cranberries 300 g
rum 1 tbsp

Cooking method

  • 1. For the dough, dissolve the yeast in warm milk, mix with flour and leave to ferment for 2 hours.
  • 2. For the dough, grind the butter of a plastic consistency with sugar, mix with an egg. Add the mixture to the dough and knead until smooth, then add flour in several steps and knead for 2-3 minutes at medium speed (I knead with a hand mixer). Leave to ferment for an hour.
  • 3. For a snack, grind the poppy seeds with 1 tbsp of sugar (take sugar from the total amount), pour in 1 tbsp of rum and stir well.
  • Beat the butter lightly with the remaining sugar, egg, vanilla and zest. Pour the mixture into the dough, add salt, poppy seeds and knead at medium speed for 10-12 minutes until an elastic kolobok of soft consistency is formed. Leave until doubled in volume.
  • 4. For the filling, pour boiling water over the cranberries, let them soften and squeeze well. Combine with thawed cherries and puree with a blender, pour in the remaining rum.
  • 5. Leave a small portion of the dough for decoration. Roll out the dough 0.5 cm thick, distribute the filling, roll up the roll, connect it in a ring and fasten the ends well. Roll out the harnesses from the remaining dough, form coils and distribute over the dough. Prove the cake for about an hour. Bake at 180 degrees for 40-50 minutes. Before baking, grease the pie with yolk mixed with a little milk and sprinkle with poppy seeds.

The cake is very aromatic. The dough is light, fluffy. The filling is slightly sour and has a pronounced taste of fresh cherry. Those who like it later can add sugar to the filling. A poppy note completes the flavor composition of this cake.
