Yes, mixer and blender are two big differences. Here above they gave a recommendation, if with a mixer, then the oil is poured drop by drop, the principle is the same as in the manufacture of mayonnaise.

I do this nutella like this:
First, I mix warm milk with sugar in a tall narrow container until the sugar dissolves and be sure to add a little ... salt. So the taste seems to me richer, more interesting.
I felt it when I once used salted nuts (there were no others at that moment).
Then I add rast. oil and turn on the blender at high speed. The mixture should thicken immediately.
If I'm using a mixer instead of an immersion blender, add oil in a thin stream with the mixer running at full speed.
Once the mixture has thickened, add cocoa and milk powder and beat again with a blender.
I do not always add nuts, sometimes instead of nuts I use fried sunflower seeds - it is very tasty and the smell of sunflower oil is quite logical, although I take the oil clean and after the refrigerator it does not smell, if without seeds.
But I love this smell, for me it is kind of cozy, homey. In my seed nutella, it is barely audible.
I also really like the coconut version.

Sometimes I make different variations:
with vanilla sugar (I add it along with sugar to warm milk)
with cinnamon - I add it with cocoa
with nutmeg - I also add a pinch of cocoa
with rum - I add very little with butter.

Here someone asked about using such a nutella for a layer of biscuit - I do it, I like it, especially with a chocolate biscuit.
Once, like, "Prague" made with such a cream - cool.
By the way, sometimes, remembering this nutella, I make a cream according to recipes for butter, but I use emulsified sunflower or coconut oil instead of butter. - interesting for a change.

At the same time, sometimes I make a two-color cream for the cake: after the first stage, I divide the mixture into 2 parts and add only cocoa to one of them, and only milk powder or cocoa and milk in different proportions to the other, then the cream turns out to be different, - very dark, white, light or dark coffee, etc.
But I try to use them side by side so that both (3-4) options fall on the tooth. For example, like a zebra or spirals I apply.
By the same principle, you can lay it in a jar in layers, and then wrap the spiral with a stick.
