Sand tart with banana-grapefruit filling

Ingredients

for cake
wheat flour 1 cup
coconut oil 1/3 cup
powdered sugar 1/2 cup
for filling
banana 1 PC
grapefruit (juice) 1/2 pc
sugar ~ 50-60 g
vanilla extract 1 tsp
corn starch 2 tbsp. l.
wheat flour 2 tbsp. l.

Cooking method

  • Mix flour, powder and melted coconut oil to make sand crumbs.
  • Transfer them to a baking dish, spread evenly over the bottom, pressing with your fingers.
  • Put the mold in preheated to 1700From the oven and bake for 5-7 minutes.
  • Put all the filling components in a blender and beat until smooth.
  • Pour the mixture over the crust, place in the oven and bake for about 30 minutes more, until the filling is firm.
  • Allow to cool, and refrigerate for at least 1 hour.

Olya, Thank you! I would not recommend replacing it. I liked it and it seemed interesting exactly this combination: banana and pink grapefruit.
You can do it with an orange, if you want, you can do it with a lemon.
For this number of components, I used 8x18 and 16x16, the side is ~ 1.5-2 cm.

The first option: Grapefruit, all according to the recipe, only replaced the coconut oil with butter.
The second option: Orange, dough in vegetable oil and added cinnamon and orange peel, whole grain flour, well, in the filling - orange juice.
I really liked the result (well, for the first time), as beautiful as yours did not work, but the taste is super
But I overexposed in the oven, although I paid attention to your words that near 30 minutes, but since my form is deeper, I thought that 30 minutes would be better. Therefore, the crust, which is inside the mold, turned out to be golden, although on the other hand it did not affect its taste. And yet, in terms of sweetness, it is normal, but I love almost unsweetened pastries, next time I will reduce the sugar a little (well, this is my personal preference)
In general, thanks a lot for the recipe !!! I will improve in this direction
