Ostfriesische Teecreme East Friesland Tea Cream

Ingredients

Milk 150 ml
Black tea 4 tsp
Water 125 ml
Sugar 100 g (5 tbsp. L)
Yolks (I have 3 yolks plus 1 protein) 3-4 pcs.
Gelatin 4 records
Vanilla pod or vanilla sugar 1 PC. or 1 package
Chilled cream 33% 200 ml
Raisins (pitted) quiche-mish 100 -150 g
Rum Rum 125 ml (I have 60 ml of rum + 60 ml of sweet tea brew)
Gelatin for pouring 1 plate

Cooking method

  • "They sat and drank tea at the table, and talked a lot about love. The gentlemen were elegant, the ladies were gentle."
  • Heinrich Heine "Book of Songs"
  • In the middle of the 17th century, the first mentions of tea appeared in Germany, but tea was sold exclusively in pharmacies and was used as a medicine. However, already in 1848 the sailing ship "Prussian Eagle", as evidenced by the chronicles of that time, brought from Canton 8065 cases of fragrant tea leaves to Hamburg warehouses, which shows how much the interest and demand for tea increased at that time.
  • Monopolists from the end of the 18th century in the field of tea trade were England and Holland on equal terms. Tea was brought to Germany through the cities of Bremen and Hamburg, and was delivered, as a rule, from its country of origin, China. At this time, green tea was mainly consumed in Germany.
  • However, when England began to cultivate Chinese tea seeds in its Indian colony, first in the Assam region and then in Darjeeling (familiar names for tea, isn't it?), Holland lost ground. And since England also produced black tea on its plantations in India, gradually, along with the change in imports, a taste for black tea began to take root. Hamburg merchants were not taken aback and began to supply surplus green tea to Arab countries.
  • The inhabitants of the Hanseatic city itself fell in love with the so-called "Hamburg mixture" of green and black tea.
  • As such, the Germans do not have a particular culture of tea consumption, they just enjoy the drink. Why not enjoy when tea is served with excellent pastries, a "senatorial mix" of delicious little cookies and cakes, and delicious desserts based on butter cream, including those based on tea drink.
  • I suggest preparing an absolutely incomparable version of the dessert with the addition of strong black tea for any festive table, especially for Valentine's Day.
  • Ostfriesische Teecreme East Friesland Tea Cream
  • - Brew black tea in 125 ml of boiling water and let it brew for 5 minutes.
  • - Soak the gelatin plates in a little cold! boiled water.
  • - Boil milk and tea strained from the tea (80 ml) with the contents of the vanilla pod. Or just add vanilla sugar at the end.
  • - Beat the egg yolks with sugar until fluffy and gradually add together with the soaked gelatin into hot milk tea, mix well until the gelatin dissolves. Put the tea mixture in the cold under a plastic wrap.
  • - As soon as the mixture begins to "set", but has not yet hardened to a jelly state, whip the cream until a thick consistency (do not interrupt, the cream should just become thick, fluffy, but not lumpy. Gradually, stirring constantly, combine the cream with the tea mixture.
  • - Put some raisins on the bottom in glasses or bowls prepared in advance, fill with the mixture and send to the cold.
  • In the rum left over from the raisins (I took half the amount of rum (I didn't want a strong alcoholic taste) and added sweet tea leaves, dissolve one more plate of gelatin), heat slightly until the gelatin dissolves.Place the raisins on top of the cured tea creams and top with the rum jelly. Adding tea to Admin for pouring has paid off very well. It turned out fragrant, somehow very intelligent and gentle at the same time. I will use this combination.
  • You can simply stir the raisins into the tea cream and allow to set. You can garnish the top with whipped cream.
  • And, of course, there was some “gag.” Since the family loves prunes more than raisins, we had to decorate a couple of bowls with prunes soaked in rum and stuffed with walnuts.
  • One more thing I can say that the taste of sour berries or fruits does not suit this cream at all.

The dish is designed for

4 large or 6 medium servings

Note

It works well with milky teas.

Lipchanka, Luda, thanks! Very nice!! Though they praised, but everyone strives to bang !!

And my mother is from Lipetsk

NataliARH, Natasha, the dessert is good, very pleasant, the ice cream reminded my husband! I don't have a blog, I barely have enough time for a bread machine. Well, then excessive publicity is not very good for me, in order to blog, you need to understand that you have something to share with people, and not just waste time. Maybe I'll change my mind later.
Rada-dms
tumanofaaaa, Ira, don't worry about me! This is Mashurochka so asking for dessert! You look at avku, well, a pure teenager, but how are they? Instead of love - "kill", instead of "sho and bulo", I will not hide!
Let's lure her (call an ambulance), feed her with bacon, desErts, but if she misbehaves, we'll put her in a corner on chickpeas, and "Plettenpudding her, Plettenpudinog"!

Oh, and I won't even express my indignation, I won't say that the first line was quietly so, I will sigh pitifully and go home to make dessert on my own. there was a serious encroachment on my tail.
Rada-dms, I should have a dessert, I love tea with milk ,. and even add some rum

So the signatures so that the pictures are not typed ..... clearly ..... so I still think: well, how do you manage to discuss each recipe for 20 messages from each, my husband almost kicks me out of the house with this competition)) )) Okay, grit is ready-made as usual, but it takes a lot of time to post it all, then the answers to the questions, look through all the pages with recipes, well, you know who I am explaining to ..... good, I like it all, and cook and I don’t like to spread and answer, but I don’t like going to bed in the morning, and because of this I look through the rest of the recipes in a few days at once, this is only due to lack of time, I will forgive everyone for not writing right away! maybe after the competition it will pass, or maybe it will pull on a bread maker at night

Whoa! The fact that you can make a dessert from tea is open to me!
I read your German recipes today, and I was finally convinced that German cuisine is delicious and completely undervalued on a global scale. In terms of flavor combinations, it is unexpected and refined, romantic and ... practical. Thank you for taking the time to find all this, cook and tell and show us!
Claire
Thanks for the interesting recipe and, I have no doubt, worth trying! I myself once also cooked a dessert on tea with plums and cinnamon, I liked it.
I just want to note that in the north of Germany (East Friesland) there is even a tea ceremony. Let's start with the fact that sugar tongs are the first gift a girl receives for her dowry for conformation. Then she must learn how to handle them. Tea is poured into the guest's cup on a piece of candis-sugar (not ground), and the tip of the piece should still look out, then cream is poured onto this ledge so that it does not mix with the tea, and the guest, according to the rules of good taste, should observe this process, and then this beauty is slowly drunk. Poured into a beautiful dish and only three times. But whoever drinks tea at random, in a simple way, will not be invited to tea for the second time. (A joke, of course, but there is a certain meaning in it - it means that this person is not familiar with local customs or does not respect them.)
Rada-dms
Claire, thanks for the information, it will be interesting for everyone to read!

We didn’t find anything like this on our last trip to Germany. And I really wanted to try the real version. Unfortunately, there are several desserts on the menu of restaurants, and everything is like a blueprint. Panna cotta or caramel cream, strudel and chocolate cake or fondant. Sometimes sorbets. Were in tourist places and in the outback ...
