Ingredients

Flour 250 g
Warm water 100 ml
Milk 2 tbsp. l.
Salt 1 pinch
Sugar 50 g
Vegetable oil 2-3 st. l.
Butter 100 g
Egg yolk 1 PC.
Egg 1 PC.
Breadcrumbs or
crushed biscuit

Cinnamon 1/4 tsp
1/2 lemon juice
Strong, fragrant apples 7-8 pcs.
Almond 70 g
Raisins 80 g

Cooking method

  • Preheat the oven to 220 degrees. Sift flour and make a depression in it. Pour 1 tbsp into the recess. a spoonful of vegetable oil, beat in an egg, add a pinch of salt and water and knead the dough. Divide the dough in two. Add 1 tbsp to one part. a spoonful of vegetable oil, combine with the second part and knead again. Roll the dough into a ball, pour over the remaining vegetable oil, cover with a bowl and leave for half an hour. Peel the apples, remove the seeds, cut into thin slices and sprinkle with lemon juice. Grind almonds, pour over raisins with boiling water. Sprinkle a large cotton towel with flour, roll out the dough very thinly on it and grease the dough with butter. Sprinkle with breadcrumbs or biscuits, leaving a 10 cm wide strip of dough from one edge. Put apples, raisins, almonds evenly on the breadcrumbs. Sprinkle with sugar mixed with cinnamon and spread the butter cubes on top. Beat the yolk with milk with a fork and grease a strip of dough without filling. Roll the strudel into a "sausage" with a towel. Grease a baking sheet with the remaining butter, sprinkle with flour and place the strudel with the seam down. Brush it with yolk and milk and bake for 40 minutes. During baking, grease strudel with yolk and milk 2-3 more times.

Apple strudel.

Sift flour onto a board, beat an egg into it, add vegetable oil, water, salt, vinegar and knead a tough dough. The dough should be handled and thrown forcefully onto the board until it stops sticking to the hands and the board and starts bubbling. Then place the dough on a floured dry board, sprinkle with warm water, cover and leave for 30 minutes. After that, put the dough on a floured linen napkin, roll it out slightly, giving it the shape of a rectangle, and stretch it with your hands until the dough becomes completely transparent. Leave the very thinly rolled dough for a while to dry. Then divide the dough into 2-3 rectangles, grease with half of the melted butter, cover almost the entire surface with the filling and, carefully lifting the edge of the napkin, roll up the rolls. Pinch the edges firmly and place the rolls on a greased baking sheet. Drizzle with melted butter on top and bake at moderate temperature for 45 minutes, brushing several times with melted butter. Sprinkle the finished roll with icing sugar and cut into slices 2-4 cm thick. Serve warm or cold.
Cooking apple filling. Peel the apples, remove the core, cut into small wedges or grate on a coarse grater. Mix the breadcrumbs with a little sugar, lightly fry in butter and sprinkle on the prepared, oiled dough. Spread the prepared apples, raisins, almonds on top in an even layer, sprinkle with cinnamon mixed with sugar and roll up a roll.

THANK YOU ! I understood why I didn’t succeed - I didn’t add crackers to the filling and the dough inside from the apples turned out to be raw, and the crackers absorb all excess moisture. At the weekend I will definitely try and report on the work done. Thanks again!!!!!

For the past two years, I and all my neighbors have been baking Strudel according to the recipe of the Accountant's Sofa.
200 gr margarine
3 cups (250 ml) flour
A pinch of salt
1 cup boiling water

Chop flour with margarine or butter into crumbs, sometimes I just grind it with my hands. Pour a glass of boiling water and first with a spoon, and then with your hands, collect the dough into a lump. Do not knead, but only assemble into a bun. Divide into 3-4 parts and forget in the refrigerator for a couple of hours, or even days.
Cut the apples into small pieces.
Remove 1 part dough from the refrigerator and roll it out thinly, lightly grease the entire surface with vegetable oil and sprinkle 1/3 of the surface where the apples will lie with 1 tablespoon of semolina. Lay out the apples, sprinkle them with sugar and cinnamon to taste and again with semolina. There shouldn't be too many apples. We roll up the roll, pinching the edges. We transfer to nasty. We do the same with the rest of the test.
We bake in a preheated oven at 180-200 degrees for 20-25 minutes. The first 15 minutes - the oven should not be opened.
It also turns out very tasty if the filling is made from nuts with sugar.
