Cauliflower salad

Ingredients

cauliflower 300 g
meat or chicken 300 g
onion 2 pcs.
eggs 2 pcs.
pickles 200 g
green pea 1 can
mayonnaise

Cooking method

  • Boil cauliflower. I do this in a microwave oven on the "double boiler" program - 2-3 minutes. If you cook on the stove, then put the cabbage in boiling salted water and cook for a short time so that the cabbage remains firm. Boil meat or chicken (this time I had chicken fillet). Finely onion and marinate for 30 minutes (marinade - water and vinegar 50/50). Hard-boiled eggs. We disassemble the finished cabbage into small inflorescences. Cut the eggs, cucumbers and fillets into cubes and add them to the cabbage together with the peas. Put the pickled onions and season the salad with mayonnaise.

Note

The salad is tasty and light. Sometimes I replace pickled onions with green feathers, and instead of pickled cucumbers I put fresh ones. Also, this salad can be prepared without meat, just vegetable, but no less tasty. The main thing is not to overcook the cabbage!

I was interested in a combination of products that was unusual for me.
I took baked chicken as meat, replaced the peas with fresh frozen ones (kept them in boiling water until the desired condition), and replaced some of the cauliflower (about a third) with broccoli. Both broccoli and colored broccoli are frozen (slightly out of season for fresh). The onion is red.
I got a kind of refreshed version of Olivier, with crisp spring notes. I am very pleased with the result. Thank you!
