But I still risked making cherry ice cream with cream and did not regret it. I love cherries in any form, but especially dumplings with cherries, and so that I can pour sour cream and cherry syrup. I just prepared cherries for this purpose, covered it with sugar, but my hands did not reach the dumplings. There is my cherry in the fridge, and then I just bought an ice cream maker, and the "opupeya" ice cream began. After reading the unflattering reviews about cherry ice cream, I thought about it and made it according to this recipe:
Cherry b / c (covered with sugar and given juice) - 260g (juice from the cherry poured into a separate bowl, then poured ice cream)
Condensed cream with sugar - 140 gr (about 1/2 soft pack of "Gustiar" brand)
Cream 33% - about 300 gr (what's left of the 470 gram pack)
Powdered sugar - 3 tbsp. l. ordinary with a slide

I ground the cherries with a blender, added condensed cream and whipped some more. Then whipped cream 33% with powdered sugar and combined these 2 mixtures, beat a little more, chilled and - into an ice cream maker. After 30 min. it turned out delicious ice cream, very tender. After re-freezing, there is not even a hint of ice crystals in the freezer compartment. But with 10% cream I made a melon-cherry - it's another matter, the ice crunches.

And I used to make cherry ice cream from frozen pitted cherries with condensed milk, when there was no ice cream maker yet. The proportions are arbitrary. The whole thing was crushed in a blender and it turned out very tasty.

Of course, I don't quite like the low fat ice cream. I also ground the cherries with a blender right in the puree. Separately, whipped cream with powdered sugar. Then I added there (in whipped cream puree from cherries. Stirred and put in an ice cream maker. Then I put the thickened ice cream in a plastic box and put it in the refrigerator. Either I love cherries so much, or I don’t know why, but it turned out delicious, not very sour cherry ice cream. At the very beginning I wrote that the cream should be taken fatter 35-38%. in my opinion the same ice cream with strawberries is very sweet. But sour cherry, that's it! And if you make assorted balls of strawberry, vanilla , cherry or currant ice cream, it will be, I think, very tasty.

I add half a lemon to strawberry juice, both taste and color win. And so I do it in different berries (currants, cherries, blueberries). Everything is delicious in its own way and the cream has never curdled.

I imagine this miracle. Of all the fruits and berries that I made, the cherry with heavy cream is my favorite. Only I have no homemade cream, I have to be content with purchased ones.
