The principle of drying fruits and other things - liquid removal from fruit preparations! And the sooner this happens, the better the finished product will turn out, it will not lose color, taste, it will not sour from being kept raw for a long time, it will be tasty and well stored. If the fruit is completely underdried, moisture will remain in it, which will spoil the product during storage, mold, and decay.
Therefore, it is better to put the drying immediately on a high T * 55-60 * for several hours until the fruits acquire a sluggish and dull color, the juice dries up (observe yourself). And only at the end of drying it is possible to reduce T *, to do less - my practice has shown that it is better not to do this.

At T * 35 * we dry only greens !!!! And then first it is better to give a high T * in order to quickly remove moisture.

To understand the meaning of what I have written, make an experiment: put greens on the paper to dry - it will dry for a long time (several days) and some of the greens will begin to turn yellow, you will have to remove some of the greens, and the greens may eventually dry out brown in color. The reason - the drying temperature is low, about 25-30 * indoors or on the balcony.
This will not happen in the dryer - since we will give the opportunity to quickly remove moisture and let it dry quickly.
The temperature 55-60 * is not so great for drying, especially with a breeze, under a fan, which removes excess moisture from drying well
