Thanks for the great recipe !!!! I have already dried cherries from 4 kg, it turned out super. I feel that she will not live to winter I will dry more and more

Natasha, good health! Try to get away until winter if possible

Tanyush!Didn't see your recipe. How everything is described and scheduled! And then I got in with mine!

Finally I got to the normal Internet! And I can provide a short description of my exploits.

She bookmarked this topic for a long time, almost the first. She licked her lips. Finally it happened! Berries + free time!

I don't have a lot of cherries - there is only one adult tree, the berries are small, sweet and sour. I was not able to buy a dryer - my hands do not reach. But it so happened that the whole season I was busy with the garden. And all the fertilizers were on time.
Why am I? To the fact that in the end she was left alone with a ripe cherry tree. Which finally yielded more than a glass. So no one stopped me from experimenting. To eat everything without leaving it to relatives is not in a relative way. Jam is tasty, but trite. Compotes - it will not be enough. For 3 and a half families it is necessary to roll up.
After eating my legal share of the harvest (the one that I considered mine), there are not many berries left, without seeds - so in general I didn't gain a kilogram.
Nothing! I told myself! But I'll save sugar!
I did everything according to the instructions. Due to the lack of a dryer, the final stage took place in the open air at +32 in the shade (here I was lucky, definitely). Only trouble happened at this last stage - relatives arrived. So it was not possible to determine the mass of the final product. I defended the last 120 grams with a fight!
Next year, 2 more trees should already bear fruit normally. Relatives are already rubbing their hands. But it seems to me that I will have to buy berries - very tasty!

And then the plums ripened! Obviously, the processing on the snow did give its results: instead of ever-worm berries, I got a HARVEST! Here I have two mature trees that were trying to uproot everything (as I said, wormy fruits and chronic crop failure). In the same season - heaps (literally and figuratively). So it was a sin not to wither them.
I should have read more carefully, I confess. For the first time I selected the ripe ones. The result - 20 percent lost their shape.
But the second time I took perhaps not frankly green ones. AND! Woo-a-la! Received! Not a prune, but something unusual! And delicious! Sweet and sour (I was afraid when I took greenish ones).

Admin! Thanks for the wonderful recipe!

Tatyana, to your health!
With such an amount of cherry and plum harvest, the most important thing to do is preservation. And the guests are not stale, enough for everyone! Or not, not enough - are the guests omnivorous?
vedmacck
Admin, alas, only a harvest of only plums. Cherries, as it was calculated, to satisfy only the annual internal family consumption (and in fact 3 and a half families) need 20 pieces. And we have 6 acres
Next year I will not wait for the full ripening and the beginning of the plum fall, but immediately at the expense, as it turns pink. That is, wither and smoke!

And necessarily a recipe in the studio - how to dry and then SMOKE, it will be very interesting for everyone
vedmacck
I will try. It all depends on the harvest and the availability of free time.
Sone4ka
literally now I will "blanch" the plums in sugar syrup (the syrup is warming up) and the idea came to add a little citric acid, a very sweet plum was caught and its acid is clearly not enough even in the finished form. I did a test batch - it's delicious, but I don't have enough acidity.

or is it a bad idea?
Mariii
Admin, and can you tell what proportions of sugar are needed for drying cranberries? I really want to try, especially since the bucket of cranberries has poured into the basement.

Opened the season. Dried strawberry chips. And today the cherry is already dried in the dryer. The handles are black, the nails are dyed, but 15 kg of cherries are freed from the seeds. Sun-dried petiole in winter is worth a manicure, I will wash it off.

I dried the cherries without sugar processing, they are already sweet, my fingers stick together. Now I am drying cherries, of course, with sugar.
vedmacck
Merri, I think, sugar in the drying process is not for sweetness, but as a preservative. Admin will correct me if I'm wrong.
Merri
Tatyana, I dried cherries rather than dried, it turned out almost like raisins, even similar in color.

Merrithen it's just another dish

It's like a way wither cherry, according to technology. And this is necessary in order to replace raw cherry juice with sugar syrup, so the cherries will dry better. I will keep silent about the taste
You can dry it like that, only there is a lot of juice in it.
Merri
Finishing the process of drying cherries. The output will be a "handful" of yummy. Initially, I had less than 2 kg of pitted cherries.
kliviya
But I decided to try to dry the cherries with seeds a little. Before drying, be sure to blanch. Next time I will try pitted.
Here is my video review of how I did it

Lenusya
I dried cherries in an accelerated way: for the first 5 kg of pitted cherries I added 400 g of sugar per kg - tasty, but very sweet, for the second - 150 g of sugar per kg of cherries, it turned out very tasty, the sweetness is normal, however, it is necessary to dry longer. Now I will put more, but add 100 grams of sugar per kg of cherries. Homemade sweet cherry, "fleshy", sweet.
Natalia Sirotenko
My first dried cherries according to a simplified recipe milka-80 from 6 kg of pitted cherries came out 1.7 kg of dried

So I dried some more cherries, but this time without a bone! So I liked it better, but removing the bones is already painful for a long time, and my fingers get tired. From 1.5 kg. it turned out 220 g.
Here's what happened:

bu-buka
The cherry turned out super! Of course, I got tired of getting the seeds (without a bone and juice, I got 2 kilos of cherries), but it was worth it !!! The result is really sweet for me, just to eat) but in baked goods I cooked rice pudding Today I cooked rice pudding and there my cherries for testing, mmmmm, awesomely delicious! Thanks for the recipe!
Karry79
I did it according to the full and abridged version. In the first case, Cherries are sweeter, similar to candied fruits. In the second case (I used 500 g of sugar), the cherry is more sour and the cherry taste is more pronounced. My cherries take a very long time to dry. 6 hours on the third mode and another 6 hours on the average. The result is excellent! The yield from 8 kg of fresh cherries is 1.9 kg of dried.

In general, having worn out with drying cherries, brought out the following for myself (I will not open America, we have already talked about this):

- there is no point in drying juicy fruits / berries. It is a very long process and, as it seems to me, is not justified.

My cherries dried without interruption for a day and a half and did not dry out to the condition I needed.
Therefore, now I will only dry out. If you need not very sweet for pies, you can put less sugar, the main thing is that it gives juice. Well, then follow the recipes described above.

Enjoy cooking!

I dry a watermelon in Isidri for a day. Watermelon!! At the second temperature level. I have a suspicion that this was an experiment with pitted cherries, that is, the skin is not broken. It will never dry out this way. This is written in the instructions. It is necessary to blanch in water with baking soda so that the skin bursts and then dry ...
Admin

Or you can prick the cherry with a knitting needle, and let the excess juice drain, and it is advisable to remove the seeds
Crochet
Tus, that is, do you think that pitted cherries will dry out in a day?
Scarecrow
Crochet,

Innus, must be without a bone. She is pretty "broken". For reliability, you can hold it more, but in theory it should.
Karry79
There was a drying experience. I forgot to blanch. For 30 hours, the pitted Cherry has not even changed its appearance. It was so fresh. I had to eat it like that.
The whole family liked the jerky. Already 30 kg have been processed. And after drying the cherries I decided to give it up.
Natalishka
Strange, but my pitted cherries were dried for a day. Now just turned it off. It looks like raisins. The cherry was very ripe. When I took out the bones, then immediately into a colander and the juice flowed down. Then immediately into the dryer.
Merri
I already wrote in some topic that today I dried cherries with seeds for 2 days (or three), in general, until it dried well. The cherry was medium-sized, but very ripe, juicy. So it is perfectly possible without any preprocessing!
Karry79
Well, if the berries are dried for 2-3 days, the meaning disappears in them. The way out is small, electricity will eat a lot in three days.
Merri
Katerina, I will not say anything about electricity consumption (my husband does not swear, which means payments fit into the usual expense). During the night, you can only dry the apples.
rulya
Karry79, Isidri eats 0.5 kW in 1 hour, but at the same time: refrigerator, TV, computer ... and all electrical appliances not switched off * JOKINGLY * are turned on.
Karry79
0.5 kW per hour, 360 kW per month. And besides cherries, I want to dry many different other fruits. I mean, spending 3 days just drying cherries is irrational.
Admin

You think something is wrong. In summer, I dry a lot in Isidri500, and NEVER! consumption did not increase by 360 kW - NEVER!
The increase is insignificant. People would buy dryers if the increase was what you expect
Darika
Admin, thank you very much for the recipe for dried cherries! I have been using it for the second year already, but for some reason I prefer to dry it harder. The yield of the finished product is less, but I like it more in taste and is stored at least until spring in a simple tin can in the closet. I get quite dark sweet and sour "raisins", we eat them with herbal tea, like sweets, and even my husband, who does not like sweets at all, appreciated such cherries)
This year, from 4 kg of cherries, I got 700 grams of the finished product. For the quality of the photo, I apologize, except for the phone there is nothing to shoot)

By the way, is there a recipe for dried raspberries in your magic book? Can this berry be dried at all, or is it too tender for this? I liked the dried one only as an additive to tea.
Admin
Dasha, FOR HEALTH! Hello husband, let him eat a cherry too

I would not dare to dry raspberries, berries are too tender.
I made chips from it, pressed the berries with a fork (each separately) and into the dryer - and dried up in separate cakes. I added a mix to other fruit-berries - I liked it.

Here you can find pieces
