Pancake mousse cake

Ingredients

Pancakes
egg 2 pieces
milk 325 ml
sugar 50 grams
wheat flour / grade 115 gram
vegetable oil b / s 20 grams
vanilla, salt taste
cocoa 15 grams
Mousse
milk 430 ml
water for gelatin 120 grams
gelatin 20 grams
sugar 100g
yolks 2 pieces
corn starch 20 grams
cream 33-35% fat 250 grams
salt pinch
vanilla taste
any fruit (I have a banana, orange, strawberry) 500-600 grams
split form d20

Cooking method

  • Pancakes
  • Sift cocoa with flour.
  • Mix well.
  • Add sugar, yolks.
  • Add vanilla and salt.
  • Pour in milk gradually.
  • Stir with a whisk or mixer so that there are no lumps.
  • Add oil.
  • Leave the dough for 15-20 minutes to swell the gluten.

  • Pour gelatin with water and leave to swell.
  • Mix starch with sugar and salt.
  • Add yolks and stir well.
  • Pour in milk.
  • With constant stirring, bring the mixture to a boil and thicken.
  • Turn off heating.
  • Put swollen gelatin and vanilla, stir everything well.
  • Cover with foil and leave to cool to room temperature.

The guests are delighted, very delicate cake, neither add nor subtract. I’m so and so - maybe more sweet? Less fruit? No, they said, leave it as it is, everything is magical.
Personally, I only lacked bright colors - I made it with a canned cocktail of tropical fruits, there were only 3 or 4 red papains in the whole jar, the rest were all pale pineapples and someone else.
From practical notes. It was difficult to wrap the mousse bags. 2 tablespoons of mousse did not fit (can I have small pancakes? I had a 20 cm pan), I poured two spoons into the first pancake, folded it - everything flowed from the edges, I had to pour it.
Folding the bags and sticking them into the mousse is also, in general, a task for speed and sleight of hand. You hesitate - the bags begin to creep apart. But I made it.
Total cake, easy to prepare and eat. It will be really cool in the summer.

The cake made an impression on the guests, it's true.
Pros of the recipe:
1. It looks impressive, unusual. I would say original. This is not a boring biscuit ...
2. It is not difficult to prepare (I am not particularly fond of baking cakes, my experience is not great, but I have not encountered any particular difficulties).
3. "Light" in the sense of eating, does not leave heaviness on the stomach as it happens, for example, with honey cakes or Napoleon.

Cons of the recipe:
1. Time costs. On the other hand, what kind of cake can you get without spending time?
2. It is difficult to call a budget cake. We are northerners. All fruits are purchased, strawberries are expensive. And cream of 33% fat is not cheap.

What little difficulties I faced:
1. After the "rest", the pancake dough thickened slightly, we had to add milk.
2. From this amount of dough, 10.5 pancakes were obtained. Thus, a few pancakes were not enough for me to decorate the middle of the cake beautifully (7 - 8 pancakes could easily enter the center, I only have 5).
3. The pancakes are hard after baking. I had to cover with contact tape and wait to soften. I didn't want to use excess fat to grease the pancakes.
4. The base mousse is not stable. Too tender ... It feels great in the refrigerator on the top shelf. But on the festive table in the hall (the room is rather hot) - it melts, floats. I had to put it in the refrigerator and take it out only to cut off a piece. Although, perhaps, this is how it should be ... I don’t know ... It is also advisable to keep ice cream only in the cold :-) Probably next time I will add a little more gelatin.

What would change:
1. I didn't have enough sweetness. Yes, yes ... Ordinary sweetness. Although the guests noted that the cake is refreshing, light, not sugary, and this is undoubtedly a plus! But it seems to me that the amount of sugar in the mousse can be doubled and added natural vanilla.
2. Not impressed by the pancakes. They are somehow tasteless. Just please, I beg you not to be offended! This is purely my opinion and it is clear that it is extremely subjective. The taste and color, as they say, have no comrades ... The pancakes again lacked sweetness, the cocoa was slightly bitter ...







In no way did she want to offend the author. In general, the cake is very WORTHY. Just next time I'll adjust some of the components to my liking.




I want to share a recipe for very tasty chocolate pancakes, which may well form the basis of this cake (I have been baking for several years for my eldest son - a sweet tooth):
1. Dark chocolate with rum "Russia - a generous soul" - 60 gr .;
2. Chocolate syrup (ready-made from the bottle) - 2 tbsp. l .;
3. Eggs - 4 pieces;
4. Milk - 1 glass;
5. Drinking strawberry yogurt "Biobalance" - 3/4 cup;
6. Sugar - 2 tbsp. l .;
7. Salt - 1 tsp;
8. Baking powder - 2 tsp;
9. Flour - 1 glass;
10. Vegetable oil - for greasing the pancake pan;
11. Butter - for greasing pancakes (optional).




1. Melt chocolate in a water bath or microwave. 2. In a bowl, beat eggs at room temperature. 3. Add warmed milk and room temperature yogurt to the eggs. 4. Add sugar, salt and baking powder, mix well. 5. Combine melted chocolate with chocolate syrup. Add to the dough, mix well. 6. Leave the dough to rest for 5 to 10 minutes.




Bake the pancakes on medium or low power, as they are sweet and the edges may burn on higher heat.It is enough to grease only the edges of the pancakes with butter, the pancakes themselves are soft.
