Sponge roll with honey meringue

Ingredients

eggs 4 things.
sugar 125 g
vanilla sugar 1 sachet
flour 75 g
food starch (preferably corn starch) 50 g
strawberry puree 100 g
sugar 50 g
egg 1 PC.
butter 25 g
honey 80 g
sugar 60 g
white 2 eggs

Cooking method

  • 1. Prepare a biscuit
  • Separate the whites from the yolks. Beat the yolks with 125 g of sugar, vanilla sugar and 2 tbsp. tablespoons of water white. Beat the whites into a strong foam. Combine the protein and yolk masses. Combine flour with starches and gradually introduce into the protein-yolk mass. Place on a baking sheet covered with baking paper and bake for 10-15 minutes at 170 degrees.

  • 2. During this time, prepare the impregnation syrup.
  • 2 tbsp. tablespoons of sugar and 1 tbsp. bring a spoonful of water to a boil. Turn off. Introduce 2 tbsp. spoons of rum or brandy. Stir quickly and cover to prevent the alcohol aroma from evaporating.

  • 3. Strawberry interlayer (can be prepared in advance)
  • Purée the strawberries. Take 100 g of strawberry puree and heat over medium heat. Stir 50 g of sugar thoroughly with 1 egg. Add quickly to slightly warmed puree, stirring thoroughly so that the egg does not boil. Add 25 g butter and cook until thick.

  • 4. Soak the finished biscuit with syrup, let cool. Apply a strawberry layer (pre-cooled). Collapse the roll.

  • 5. Prepare honey meringue.
  • Put 80 g of honey, 60 g of sugar in a water bath, mix with two proteins until smooth. Quickly add the warmed honey and whisk the meringue to a stringy state for 8-12 minutes directly in a water bath with a strong boil. Remove from heat and continue whisking until cool.

  • Cover the roll with the finished meringue and place it either under the grill or in a preheated oven with the door open so that the perenga grasps and browns.
