Ingredients

For dough: pressed yeast 160g
sugar 1st
flour 25st. l.
milk 1000ml
For dough: butter / margarine 600g
eggs 20pcs
sugar 3st
candied cherry 100g
almond 200g
candied fruit 200g
cinnamon 1-2h l.
flour 3kg
For the layer: cottage cheese 1,5kg
eggs 6pcs
sugar 1,5 st
vanilla sugar 2 packs
sour cream 200g
semolina 3-4 st. l.
cocoa 2st. l.

Cooking method

  • We knead the dough. Mix the indicated ingredients (the milk must be warm) and let rise. In the meantime, we prepare food for the dough.

  • Dough. Mix softened butter, eggs, sugar, cinnamon. Rinse and dry the candied fruits, peel the almonds. To easily remove the peel, the nuts must be kept in boiling water for 2 minutes and drained. Dry for a few minutes in a pan.
  • From flour (it takes about 3.5 kg for dough and dough in total) in a large container we make a "slide", pour in the dough and egg mixture, knead, add candied fruits and almonds. Leave in a warm place until it increases in volume by 2-3 times.

  • In the meantime, we prepare the forms - cover the bottom and walls with baking paper. Fill 1/4 with dough, sandwich with curd filling and cover with a little dough on top. Let it rise to 2/3 of the volume of the form and put it in an oven preheated to 180 degrees. After 20 minutes, I lower the temperature to 160 degrees.

  • Curd filling. We mix all the indicated ingredients, grind with a hand blender. If there is no such, cottage cheese must be wiped through a sieve.

  • We cover the finished cakes with any glaze. You can also protein, and chocolate, and store from bags. We decorate at our discretion.

Thanks for the feedback! I will try to fix it in the near future (I'm talking about the cut)

It turns out a very tasty cake! There may be as many layers as you want, I did one to see what happens, next year they will make a layer thicker. The dough should be 1/3 of the form in total.
