Ingredients

Wheat flour 1 kg
dry yeast 2 tsp
milk (fermented milk mixture 400 ml
sugar (for sweet filling - vanilla) 5 tbsp. l.

vegetable oil (preferably olive oil) 4 tbsp. l.
any flour improver (optional) 2 standard bags

Cooking method

  • 1) Dissolve the yeast in 100 ml of warm milk with the addition of 1 tbsp. l. sugar and flour. Cover the mixture in a container (for example, with a "rag grip" and leave in a warm place until bubbles form and the "cap" rises).
  • 2) Lubricate the 2 axles of the kneaders with a small amount of vegetable oil in the bucket of the bread machine. Fix the dough mixers on the axles. Pour the remaining oil over the dough mixer blades in the bread maker's bucket.
  • 3) Heat the remaining milk until very warm and pour into the bucket of a bread machine.
  • 4) Mix the beaten eggs with the remaining sugar and pour into the bucket of a bread machine.
  • 5) Sift the flour by adding 2 bags of flour improver and 2 teaspoons of salt.
  • 6) Turn the bread maker on in the yeast dough cooking mode (usually for 1.5 hours).
  • The result is an elastic dough, which is enough for making "airy" patties that fill one baking sheet. In this case, you can use any filling.
  • Bake in the oven for about 40 minutes at a temperature of 180 C.
  • When working with ready-made dough, sprinkle hands and a cutting board with vegetable oil instead of flour. Then the dough will not stick to your hands, and the flour will not crumble to the sides.

1. Calculation of the amount of ingredients for making a pie dough can be adapted not only for modern bread machines with two dough mixers, but also for traditional models, proportionally reducing the amount of ingredients.
2. For dough with sweet filling, it is better to use not "synthetic" vanilla sugar, but sugar, which is "saturated" with natural vanilla. To do this, pour 2 pods of unshelled vanilla with granulated sugar in a ~ 200 ml jar and close it tightly. After a week, the finished product can be used. Instead of used sugar, add a new portion of sand, etc.
3. Vanilla can be substituted for cardamom, cinnamon, etc.
4. Part of the flour (~ 100g) can be replaced with another composition (for example, flakes of wheat germ), and add 1-2 tbsp to the flour. l. poppy or sesame seeds.

the dough is very tender, airy, I didn't cook it better, the family was delighted, cooked pizza and pies with meat on it, the pies did not stick very well, they sprinkled the dough with flour and greased the top with an egg, there was no time to cook according to the recipe and I immediately loaded all the ingredients in a bread maker, slightly changing the recipe (3 tablespoons sugar, 1 teaspoon salt and 3 teaspoons yeast), although they stuck strongly on an ordinary tin pan, next time I will sprinkle it with bread crumbs, thanks for the recipe !
