I understood why I had such strange rolls to look at. I molded them differently. Instead of cutting the dough into equal balls and flattening each ball to the desired thickness, I rolled the whole dough into a layer and cut it out into a round shape. The edges are flattened. Today I divided the dough into parts, and tried to roll each into a flat circle.
160 degrees in traditional heating mode and 12 minutes.

(but in vain I added three minutes of baking and kept them a little longer in the stopping oven, it turned out "negros", I like lighter rolls).

And I, more precisely to tell my eaters, most of all like hamburger buns baked according to the following scheme: I put a baking sheet with dough pieces in an oven preheated to a temperature of 100 ° C (convection) for 30 minutes, then 20 minutes at a temperature of 150 ° C (convection ) ...

I myself have never tried buns from McDuck in my life, but mine assure that it is the buns baked according to the above scheme by me that are most similar to those of McDuck's, the same "cotton" ones are obtained ...

When baking hamburger buns from the same dough, but at the standard 160 gr. (convection), the buns after baking have a completely different structure ...

AnastasiaK, thanks, but not yet the ideal that I see ...
Crochet, in our city (Vladivostok) there are no "McDachny", so I do not know what kind of rolls there should be. But there are other, local comrades who make delicious buns for burgers. However, they don't want to share the recipe ...

Crochet! I have a double convection oven, or convection plus an upper shade, convection plus a lower shade ... Which mode should I choose to try according to your method?
Crochet
Tanechka, I am the right word even at a loss to answer ...

Incredibly delicious buns turned out, thank you so much for the recipe!
There was no lettuce, but they cracked without it.

The dough was made in Panasonic on mode 12 ("Basic") for 2 hours and 20 minutes. She formed the rolls, straightened them with her hands. She let it sit in the oven for half an hour, warming it up for 5 minutes for 50 grams. After proving, she anointed with milk and sprinkled with sesame seeds, as advised here, and put it in the oven. I baked at 180 degrees with heating from below and from above for 15 minutes. My first buns in my life !!!

Made 4 sandwich rolls. I didn't calculate the time, I overexposed it. 20 minutes would be enough, I had 25 minutes. I do this recipe often, thanks again)

Thank you very much I liked the recipe, although I was skeptical. Tried a ton of recipes that promised fluffy buns. In fact - soft, while warm. Then - the sole. Your dough has exceeded all expectations. I think that you can easily use it on pies with filling. The rolls are chic, airy. I will definitely bake more and more

I remembered this recipe the other day and made it too

this time she kneaded the dough with the help of a hand mixer at high speed, then transferred the dough to the HP and let it work in the "Pizza" dough kneading mode. She took out the dough, greased her hands and the cutting surface with vegetable oil, divided into 12 balls, which she flattened with her hands. She let them stand in the warmth, then smeared them with milk on the roofs, and sent them to the oven. Instead of convection, I chose traditional heating. After 12 minutes I got the result I had been waiting for
Thanks again for the recipe!

My husband was inspired to collect burgers.
We bought ready-made buns, but we didn’t experience anything other than the feeling of cotton wool, and yesterday they prepared it according to your recipe.
It was a victory!
Excellent boogers were ready in an hour!
Kneading was done in HP Panasonic, program Pizza, dry yeast 1 tsp
