The recipe from Raymond Blanc "Chicken Liver Parfait" was taken as a basis. Rabbit liver, bone marrow, three eggs, slightly fried onion with garlic, dried garlic, black pepper, thyme, butter, etc., all raw and fresh in a suitable container are beaten with a mixer until smooth. Oh yes, and a glass of Molly's Irish Cream liqueur - it contains good whiskey, cream, sweetness - exactly what a good parfait requires, in the absence of good cognac, Madeira and port wine. It is prepared in a water bath: hot water is poured into a larger form, a form with filled contents covered with foil is put into it, and all this is placed in an oven heated to 130C for 45-50 minutes (up to 60C-70C inside the dish). After baking, it is poured on top with butter (I have almost no space left for butter in the form), and for a couple of days in the refrigerator, to form the final correct taste.
Next time, when I cook something like this, I will try to make it a separate recipe here on the forum ...
