Tortillas with feta cheese "Gabrovskie pyrlenki"

Ingredients

Dough:
Water 250 g
Vegetable oil 40 g
Softened butter 17 g
Flour 430 g
Fresh yeast 20 g
Sugar 2 tsp
Salt 1 tsp
Filling:
Brynza 100 g
Savory (replaced by thyme) 2 tsp

Cooking method

  • Grind yeast with sugar, pour into a bucket of HP. There is also water, butter, vegetable oil. Top with salt flour. "Dough" mode (1h 30min.).
  • After a lapse of time, put the dough on the table, sprinkled with flour, knead. Divide into 4 (2) pieces. From each part, make a cake with your hands, 1 cm thick. Put the cakes on a baking sheet lined with paper, cover with a towel and leave to rise for 20 minutes.
  • Preheat the oven to 180C.
  • Make a depression in the center of each cake with a plate of a suitable size (or with your hands):

  • Sprinkle the cakes with water (I greased them with an egg). Sprinkle with thyme, crush the cheese into the groove:

  • Bake for 25-30 minutes until golden brown.
  • Remove from oven, brush with melted butter and cover with a towel. I didn't cover. The crust is crispy !!!

Note

Pyrlenki in Bulgaria they are called flat cakes. And the little ones with feta cheese - "Gabrovskie". They can also be without anything and with savory.
