Almond cookies with lemon wedges

Ingredients

flour 200 g
soft butter 150
egg 1 PC
lemon zest 1 tablespoon
powdered sugar 100 g
lemon juice 1 tablespoon
ground almonds 200 g
For decoration
1 yolk
3-4 lemons
sugar for sprinkling

Cooking method

  • Beat butter with egg. Add almonds, powdered sugar, flour and lemon juice and stir. Divide the dough into two and form sausages with a diameter of 5 cm. Wrap in foil and refrigerate for 3 hours.


  • Preheat the oven to 1800FROM.


  • Cut the dough into slices 4 mm thick. Put on a baking sheet and brush with yolk. Wash lemons thoroughly under hot water and wipe off with a towel. Cut into very thin 1–2 mm wedges and place on top of the cookies. Sprinkle with sugar and bake for 12-15 minutes.

  • Cool and, if desired, sprinkle with powdered sugar.


  • You can put on the grill for the last 5 minutes.


Time for preparing:

10-15 minutes.

I saw a picture of this cookie in a book and just fell in love with it. The cookies themselves turned out to be tasty, crumbly, aromatic, sweetish, but very much in harmony with sour lemon. But still, a lemon is a lemon) It should be cut very thinly, until it is transparent .. I didn’t succeed very well, because I was always in a hurry)) so I sprinkled more sugar on top.

Well ... I overdid it ... I'm ashamed of how .. !!!
Advice - do not leave the oven even a step! I should have overexposed a little and they burned. But even in spite of the black crusts, the cookies turned out to be flavorful. Instead of almonds, I added ground walnuts, and 2 medium lemons were enough. You don't need to put it in the refrigerator - I started cutting the circles and the dough melted, it was easy and quick to shape it into cakes with my hands, so next time I'll cook it without a refrigerator.
