Baked salad mix

For 1 large eggplant or zucchini
1 bell pepper (about 150 gr)
1 medium onion

Salt and pepper slightly cooled vegetables, seasoning herbs as desired. You can add garlic immediately, or later, along with the dressing.
I usually make 2 eggplants (pictured) or zucchini.
