Marinated carrot and celery salad

500 gr carrots
500 gr celery root

Marinade
75 ml odorless vegetable oil
75 ml 5% vinegar
2 tablespoons soy sauce (Kikkoman Sushi & Sashimi)
4-5 cloves of garlic
a thimble-sized piece of fresh ginger
1 teaspoon honey
1 teaspoon salt (measured)

Grate carrots and celery on a "Korean" grater. Grate garlic and ginger on a fine grater or pass through a press. Pour all the ingredients of the marinade into a deep large frying pan, add carrots and celery, slowly heat to a boil, turn off, stir and leave to cool in the same frying pan. Transfer to a jar or glass saucepan and refrigerate.
It turned out to be so delicious that I devoured a plate of the still warm salad, thus finding out that this is a wonderful side dish for meat.

P.S. My soy sauce isn't very salty. For insurance, pour in one tablespoon first. Try it before putting it in the jar. If there is little salt, add another spoonful of soy sauce.

Do you need to put out a little after boiling? Or is there enough time for the mass to boil? Is the salad still crisper or softer? I just thought, if I pour the marinade over raw vegetables and let it stand. No quenching.

irza , you do not need to stew after boiling, just enough time for the marinade to boil. The consistency of vegetables is just right - not raw, but not soft, with a crunch.
If the marinade is not heated, but simply pour over the vegetables, the marinade will not be absorbed. And after heating it is absorbed to a drop, which gives such a funky taste.
