Pork piece approx. 1 kg 300 gr
Pesto sauce 5 teaspoons
Hot mustard with grains 1 teaspoon
1 chicken breast
salt to taste

Cut the meat into pieces 3-4 cm wide. Cut each piece in the center to make a pocket.
Season the meat with salt and coat with a mixture of pesto and mustard sauce on all sides. Cut the chicken breast into strips according to the number of pieces of meat. Put pieces of chicken breast into the pockets.

Close the pockets, fasten the pieces of meat with rings or toothpicks, or tie them with culinary twine.

Place the meat in a roasting sleeve, put in an oven heated to 200 °. When the released gravy boils, reduce the heating to 140 °. Bake for about an hour and a half.
Remove the clamp on one side of the sleeve, pour the gravy into a ladle. Put the sleeve back on a baking sheet, cut on top, brush the pieces of meat with sour cream and bake until golden brown.

Serve with sauce and potatoes "Almost free"... It is advisable to take small potatoes and cut each lengthwise into 4 parts.

Sauce

Dissolve a teaspoon of starch in two tablespoons of water. Bring the gravy to a boil, add a few prunes (I didn't have any prunes at that time, I threw in a few frozen plums), a full teaspoon with a slide of tomato paste. Pour in the diluted starch with constant stirring, bring to a boil, simmer for a few minutes over low heat, bring to taste (salt, pepper, possibly sugar). Catch the plums or purée the sauce with a blender (I removed the plums, only the skins remained from them).
