Salad "Health"
Beetroot 2 kg
carrots 1.5 kg
onion 1.5 kg
Bulgarian red pepper 1.5 kg
salt 2 tbsp. l. with a slide
1 cup sugar
vinegar 9% 100 g
refined oil 1 cup
pepper optional

A very tasty winter salad, called "Health" is evident from its effect on the body. Another favorite winter preparation of mine.
The weight of the vegetables is taken in pure form.
Cut vegetables into thin strips.
In a large saucepan, fry the onions until soft, then add the carrots and simmer under the lid until they are soft, then add the beets, salt (so that the beets let the juice out) and simmer under the lid for about 40 minutes until the beets are soft. It is important that the beets are stewed and very soft.
When the beets are ready, add the sweet bell peppers, cut into strips, and simmer for another 15 minutes, covered.
Add sugar, vinegar, if you need more salt to taste, simmer for 5 minutes. You can add hot or black pepper (I did not add).
Arrange the salad in sterilized jars, cover with boiled lids, twist and wrap in a blanket until it cools.
Very tasty, slightly sour sweet, rich taste.
The output is about 3 liters.

Beets love all sorts of "additives": sesame seeds, walnuts (crushed, but not ground), prunes, even raisins and dried apricots. You can also add any grated cheese to the cooled caviar - it's also delicious! Each time a little different, a new taste.

I put about 3/4 of the finished caviar in the refrigerator, and added buckwheat and water to the rest, and it turned out to be unusually tasty crumbly buckwheat.
