There is no backlight - I didn't notice any discomfort. There is no convection either (This will make the model more expensive).

I bought, tested and even managed to disassemble and assemble.

The electrical circuit, by the way, in the stove is the simplest: network - fuses - clockwork connected in parallel with the operation indicator - thermal relay - mode switch - heating elements - network. The elements are connected in series, respectively, the switching hierarchy is from left to right: that is, if the timer is in the "0" position, then the oven does not work regardless of the position of the knobs of the remaining regulators.

Production: China by order of a Russian company. Judging by the fastening of the control panel and the quality of aluminum processing on the fixing brackets, it is being hung already in Russia (so as not to create problems for the Chinese with Russian inscriptions).
By the way, the manual for the stove contains technical data for the entire Redber family with drawings of control panels. This is important, because, for example, mine actually had a maximum temperature of only 230 degrees, and according to Internet directories it should be 300, although this is not critical for me.
With one heating element turned on, the temperature in the loaded oven is ~ 150 degrees, to reach the maximum temperature, both heating elements must be used.

About ticking: the clock mechanism here is of an electromechanical type, so it not only ticks when the time is counted, but also hits the bell with a hammer when it reaches "0" (once).

Proofing: you can defy, but carefully.
This is due to the fact that the thermal relay is located "behind the wall" of the main chamber, behind the control panel. As a result, when the thermostat turns off, having reached the required temperature, the heating element in the main chamber is already hot and glows with heat, which is not good.
The problem is solved by the thermal panel method, that is, between the heating element and the proofing vessel, we place a shield that absorbs most of the heat and thus compensates for the presence of a wall inert in terms of heat propagation between the chamber and the thermal relay. As a shield, I used
a standard baking sheet with a thin layer of water in it, as a result, in this mode, a temperature spread in the center of the chamber of 35-42 degrees Celsius was obtained, while the temperature knob was approximately one division above the minimum possible.The spread of 7 degrees is associated with a long cooling time of the chamber at temperatures close to room temperature, and the heating element in this case is switched on in a pulse mode with a large duty cycle: it works for 1 minute, then 15 rests.
I suspect that all electromechanical ovens behave roughly the same at low temperatures.
It will not work to use a light bulb for proofing, since it is corny.
