Oven self-cleaning systems can be divided into low-temperature ones, when fat particles on the wall are decomposed chemically (catalytic method), or with low heating, and high-temperature (pyrolytic), when these particles are simply burned out at a high temperature.
The walls of ovens, which use a catalytic cleaning method, are no longer covered with smooth, but with porous enamel. The pores of such a coating contain particles of a special substance (catalyst), which accelerates the breakdown of long fat molecules into the simplest products - carbon dioxide, water and light organic residues.
The catalytic cleaning process usually starts at a temperature of the order of 140-160 ° C, and proceeds most intensively at 200 ° C. In Bosch-Siemens ovens with ecoClean catalytic coating, the process runs at a higher temperature, about 270 ° C, and is called "ecolysis", which emphasizes the high degree of decomposition of fatty deposits.
Catalytic plates and grease filters are available as accessories on many hotplates and ovens. The panels, unfortunately, cannot be regenerated (however, their resource is quite large, about 300 hours), but the filters can be regularly washed in the dishwasher. It is important to remember one thing: the filter cannot be washed with the dishes! There will be nothing for the dishes from joint washing, but the pores of the filter can become clogged with food debris from the dishes, and it will stop working.
Unlike catalysis and its variety - ecolysis, ovens are cleaned with steam (hydrolysis) at low temperatures. For example, to clean Neff ovens with EasyClean, it is enough to pour water and detergent into the cooled cavity and activate the cleaning function. Hot steam will soften the dirt. After the end of the program, it is enough to wipe the oven and let it dry with the door open.
Several models of AEG-Electrolux ovens have a Cleaning system that requires the use of special sprays. The oven is heated up to a temperature of 90 ° C and held for about 15 minutes, after which an acoustic signal sounds: it's time to apply the spray! The lighting is switched on for 5 minutes (this time should be enough to spray the spray). The time it takes to remove food and spray residues depends on how dirty the oven is and the type of product used.
The cleaning temperature is even lower in Gorenje ovens with the Aqua Clean system. For such cleaning, pour 0.5 liters of ordinary water into the oven baking sheet and leave for half an hour at a temperature of 50 ° C, activating the cleaning program. Then, simply wipe down the inside of the oven, removing any residual dirt, and your oven is ready for new culinary feats.

In contrast to the delicate low-temperature cleaning modes, pyrolysis is the splitting of fat particles at a high temperature (about 500 ° C). In this mode, the oven door is automatically locked as soon as the temperature inside reaches 300 ° C in order to prevent it from being suddenly opened by children. The door can be reopened only after the temperature inside has dropped to 200 ° C. After the end of pyrolysis, the hostess only needs to sweep the ashes out of the oven.
The vapors generated in the oven with such a strong heating are cleaned by passing through a special filter so that unpleasant odors do not form in the kitchen. And yet, sometimes you can hear the opinion that pyrolysis is accompanied by a characteristic odor. It's all about the accuracy of the stove owner. A pyrolytic cleaning system can work wonders, but its possibilities are not endless. If you only clean the oven every six months, odors cannot be avoided. Experts recommend pyrolytic cleaning after every major meal. Then there will be no odors, and the stove will be in perfect order.
Depending on the degree of soiling of the oven, the owner can set the cleaning mode to light, medium or intensive. Until recently, this was the only "degree of freedom" when operating with such an oven. Recently, manufacturers of household appliances have offered new opportunities to owners of their products.
Do you know how often housewives use the oven? Special studies have shown that, for example, in Moscow - from 2 to 4 times a week. And English housewives do it 7-10 times a week, but they mostly cook not meat dishes, but dishes from vegetables, for example, such unimaginable dishes for us as baked cucumbers. To remove light, "vegetable" contaminants from the oven, a comfortable pyrolysis mode was invented, which includes a phase of preliminary firing of the oven cavity. It is used in Gaggenau and other BSH products. The pre-firing is carried out at a low temperature, and, therefore, the energy consumption for the entire cleaning cycle is reduced.
The next stage in the evolution of pyrolysis is associated with the introduction of an additional element into the design of the oven - a catalytic filter with a small heating element of its own. Food residues burn out on the filter, so its temperature is slightly higher than the temperature in the oven. When these residues are burned out, and the temperature of the filter equals the temperature in the cavity, the pyrolysis can be finished. Indeed, why waste electricity?
The problem of automatic control over the residual level of contamination in Whirlpool pyrolytic ovens is solved in a different way. Here a special sensor of the 6th Sense system monitors the concentration of carbon dioxide in the cavity. There is a lot of gas, which means that pollution is still decomposed by the high temperature. The concentration of carbon dioxide began to fall, which means that all fatty contamination has already decayed.
