The rest of the dough of 1.5 kg was finally mixed into hearth bread and was used up for two wonderful, well-opened hearth bread loaves. Qualitative characteristics, again according to my subjective observations, are much higher than my average manual batch, and "Kenwood" batch, given the same recipe, temperature, time and technological processes. In general, in two words - I'm satisfied.

Then he calmed down, put the hook, without a shovel and everything worked out. After the fourth batch I feel more confident - I do everything liquid and semi-liquid with a roller, the rest with a hook, but at the same time I checked - the hook with the initial batch does quite well on its own. So, in most cases, you can only do with a hook, as I liked it more. But at the same time, the well-known Luda, according to my observations, in most cases, still uses the video. She has more experience, maybe I'll see what in the video over time. In any case, the video does not lie idle for me - it works great on liquid dough, primary talkers and high hydration dough.

Well, there is almost nothing to say, so everything is clear .. although there is! - a very correct technological solution, it plays the role of not only a scraper itself, but also a kind of stopper for transferring the dough, that is, the dough rests against it and, it has nowhere to go, it starts rolling, changing its trajectory, braiding and shifting, which is what we need. Apart from this, I, for example, have adapted to them to do the intermixing kneading, when the dough is defrosted in the mixer bowl. I inserted the scraper - turned it on at low speed, walked the circle along the outer edge and then folded the dough a couple of times with several quick movements. It turns out very much, like the classics have? oh .. - "gorgeous" (humor joke! do not be offended).Gas does not come out of the dough much, the dough does not "break", but at the same time, a sufficient number of folds is obtained, as a result of the necessary saturation with air, "stretching" and removal of large gas caverns, which is what we "need". It is also very convenient (according to my observations) with the same scraper to knead the nuts into the finished dough. Fast enough and evenly.
