Ingredients

Dough:
Wheat flour 340 g
Sugar 140 g
Butter 100 g
Egg 4 things.
Sour cream 250 g
Baking powder 1 sachet
(10 g)
Zest of 1 lemon
Filling:
Poppy 55 g
Sugar 40 g
Walnuts 25 g
Dark raisins 20 g
Butter 7 g
(a piece)

Cooking method

  • Mix the products for the dough (the butter should be softened. If the butter is melted, the dough will be thinner and can flow around the filling instead of lying on top), while first sugar, eggs, sour cream, then butter (if the butter is not softened, just beat it with a blender with liquid ingredients, then flour, baking powder and zest.
  • Pour the poppy with boiling water for 3-5 minutes. Drain the water, let it swell a little. Add the rest of the filling and chop with a blender (or through a meat grinder, but this is long).
  • Pour about half of the dough into each paper-lined mold. Take a teaspoon, put the filling on it, compact / tamp with your finger on the spoon, then slide the "mound" of the poppy filling into the center of the dough with your finger. Do this with each mold.

I haven't made my favorite pastry for a long time - poppy. For some reason, the poppy disappeared from the shops. With difficulty I found two packs in some market and my joy knew no bounds. Jump home to sculpt cupcakes. I didn't feel like waiting for the yeast dough for a roll, then cutting, proving. Hot. Laziness. I decided to do with "little blood", that is, cupcakes. Faster does not mean worse or less tasty, you can check!

Here, the so-called muffins. For unsweetened filled muffins, the dough should be different. Sour cream (or yoghurt) or curd cheese is suitable, but it is heavier and more moist. These muffins are stuffed with egg and green onions:
