Ingredients

Dough:
Butter 70 g
Egg yolks 2 pcs.
Sugar cookies (type 200 g
+1 tbsp. l. Sahara
Filling:
Pitted prunes 200 g
Walnuts

Fill:
Sour cream 100-120 g
Egg 1 PC.
Sugar 0.5 tbsp.
(used 50 g sugar)
Egg whites 2 pcs.

Cooking method

  • Dough:
  • Prepare a baking dish in advance (d = 20cm) - put a circle of paper or foil on its bottom.
  • Put the cookies in a polyethylene bag and crush them with a rolling pin into cereals. (Chopped the cookies in a blender)
  • Melt the butter and cool to room temperature. Separate the whites from the yolks in two eggs; remove proteins for further use in the filling. Beat the yolks with a tablespoon of sugar with a mixer. Without stopping whisking, pour oil in a thin stream directly under the rotating blades of the mixer. You should get a slightly thick mass, similar to a liquid gel.
  • Pour cookie crumbs into the mass and mix very quickly. Immediately pour the dough into a mold and knead with your fingers along the bottom and walls.
  • Filling:
  • Wash prunes and pour boiling water over them. Leave it in water until softened. Drain the water and cut the berries. Place the prunes in a mold. Pour coarsely chopped nuts on top.
  • Fill:
  • Beat egg whites with sugar until soft foam forms. The amount of sugar depends on the sweetness of the prune - for sour prunes you need 0.5 cups of sugar, for sweet ones - less. Beat the sour cream with a whole egg and vanilla. If you want the sour cream layer after baking to be harder, then you can add 1 teaspoon of starch. Then gently, with a spoon, stir in the whipped egg whites. Pour the filling over the filling.
  • Preheat the oven to t = 180 ~ 200 ° C and put the cake in it until the surface is browned - about 15 ~ 20 minutes.
  • Cool the finished cake to room temperature without removing it from the mold. And then remove it from the mold by double flipping.

    It all started with the fact that prunes began to deteriorate, large and without pits! I washed it and boiled an uzvar, drank it, but the plums remained, delicious! I was looking for a recipe where to attach them, I saw this recipe, but there were no cookies. In the evening, the husband brought from his mother-in-law a simple cookie that no one eats at home (after the delights from the Bread Maker). But there was not enough butter! ... And there was little sour cream, but there was still a little curd dough from lazy dumplings! And I was lazy to divide the eggs into yolks, whites and beat, and there were no walnuts, but there were peanuts!
    In short, I poured a little sunflower oil and 1 egg into the cookies. Cut the compote prunes and sprinkle with chopped peanuts. Beat some homemade yogurt with curd dough, 2 eggs, sugar and starch added a little for reliability !!!
