Fresh or frozen cherries 1 kg
Potato starch 40 g

Cooking method

  • Mix flour with baking powder. Knead a soft dough, wrap in plastic wrap and refrigerate for 30 minutes. You can knead with a mixer (dough attachments) or in a food processor, but not with knives (!!!).
  • Mix all components of the strusel until the desired crumb size is obtained. It is very convenient to do this in a combine with knives.
  • Defrost the frozen cherries. Sprinkle the cherries with sugar to taste (up to 100 g), put in a saucepan and bring to a boil. Place the cherries in a colander placed in a saucepan to drain the juice. Measure out 250 ml of juice. If there is little juice, add any juice or water. Dilute the starch in 4 tablespoons of juice (of the total). Bring the remaining juice to a boil, pour in the diluted starch with constant stirring and, continuing to stir, cook until thickened. Put the cherries in the jelly, stir and bring to a boil again.
  • Spread two thirds of the dough on baking paper with wet hands.
  • I give this on the table, and then insert the paper with the dough into the mold.

  • Preheat the oven to 200 ° (convection 180 °). Chop the dough with a fork and bake for 10-12 minutes.

Dry plums, cut lengthwise and remove seeds

125 gr flour + 1 tsp. baking powder
125 g sugar
1 bag of vanilla sugar
zest of half a lemon (I have 1 bag ready)
125 gr soft butter or margarine
2 eggs

Mix flour with baking powder, add the rest of the ingredients and beat with a mixer for 2 minutes.
Place the dough in a tin lined with baking paper and flatten. The dough is creamy.

Put the prepared plums on the dough with "tiles".

150 gr flour
100 grams of sugar
0.5 teaspoon cinnamon
100 g soft butter

Mix flour with sugar and cinnamon, add butter and process with a mixer into the desired size of crumbs.

Sprinkle the plums with a strosel (cover the edges especially carefully).

Bake in a preheated oven at T 180 ° (convection 160 ° without preheating) for 50 minutes.
Serve with whipped cream.
