Galette with strawberries and rhubarb (+ video)


Dough for two biscuits
cream or sour cream 10-15% fat 100 ml
egg C1 1 PC.
premium wheat flour 300 g
sugar 35 g + 3 tsp.
vanilla sugar 10 g
salt 1/2 tsp
butter 115 g
Filling for one biscuit
peeled rhubarb 150 g
Strawberry 300 g
sugar 50 g
starch (I have corn) 20 g
----------------- -------------
egg + 1 tbsp. l. milk
powdered sugar

Cooking method

Sift flour. Mix in salt, sugar and vanilla sugar.
Pour into the processor with a knife. Add cold diced butter. Pulses into crumbs. If there is no harvester, then grind the oil and flour mixture by hand.
Mix low-fat cream or sour cream with an egg.
Pour into the crumb. Turn on the processor and turn the mass into dough.
Put the dough on a table covered with flour. Collect in a ball. Spread out. Wrap in plastic and refrigerate for 2-3 hours. Can be refrigerated for up to three days.
Peel the strawberries and rhubarb and cut into small pieces.
Add sugar and starch. Mix gently.
Get the dough, unfold. Dust the baking paper with flour.
Divide the dough into two parts.
Send one part to the refrigerator, wrapped in plastic. Roll the second part into a circle. The dough should be 2 millimeters thick. Roll out thinner to the edges.
Place the filling in the center and smooth. The filling should not extend to the edges by about 3 centimeters.
Tuck the edges inward.
Grease the dough with an egg and milk mash. Sprinkle with sugar.
Send to bake in an oven preheated to 200 degrees for 20-30 minutes.
Take out, let cool on a wire rack. Sprinkle with powdered sugar.
