Ingredients

long grain rice 250 g
peeled potatoes 250-300 g.
large carrots 2 pcs.
large onion 2 pcs.
garlic 1 tooth.
lamb (beef, chicken) 700 BC

coriander 1 tsp

ground black pepper taste
turmeric 1/2 tsp

water 50 ml.

nutmeg 1/3 tsp

Fruit salad
raisins 60 g
figs 60 g
dried apricots 60 g
any nuts 60 g
lemon juice 1-2 tbsp. l.
honey 1-2 tbsp. l.
Tomato salad
a tomato 2 pcs.
red onion 1 PC.
cilantro (dill, parsley) 2-3 wet.
lemon juice 1-2 tbsp. l.
olive oil 1-2 tbsp. l.
salt taste

Cooking method

Soak rice for an hour in cold water. Rinse well. Cut the meat into small pieces. Fry in oil, salt and pepper. Add cumin and coriander. Fry for 30 seconds. Pour in water. Cover and simmer for an hour.

Cut the potatoes into slices 5-7 millimeters thick. Fry until golden brown on both sides. Put on a napkin.

Do the same with carrots.

Cut the onion into centimeter thick rings. Place on the bottom of a cauldron or thick-walled saucepan. Add chopped garlic. Salt.

Put the meat and liquid on top.

Cover the meat with a layer of potatoes and season with salt. Put a layer of carrots. Salt.

Put the rice, flatten, salt. Add butter. Pour boiling water over so that the rice is slightly covered. Cover and simmer until the rice is cooked and the water evaporates. If you see that the rice is ready, but there is still liquid, then remove the lid and wait for the liquid to evaporate.

While the maklyube is being prepared, we make fillings for it. Grind the sesame seeds in a coffee grinder to flour. Even if oil starts to form.

Put chickpeas in a glass. Add salt, oil, lemon juice, spices and water. Add sesame seeds. Grind to a paste. Bring to taste.
Dried fruit salad.

If the dried fruits are very dry, then pour boiling water over and let stand for 10-15 minutes. Lightly chop the nuts. Chop dried apricots and dates. Put everything in a bowl, add honey and juice. Mix.
Tomato salad.

Cut the tomatoes and onions into cubes. Add chopped cilantro. Pour in juice and oil. Salt. Mix.

Let the cooked rice stand in a saucepan for 10-20 minutes. Turn over to center dishes. Put salads around.

Note

Maklube or Makluba (also Magluba) is a traditional Arab dish. It is popular in Bahrain, Iraq, Jordan, Kuwait, Palestine, Syria, Turkey and Israel. Meat, rice, fried vegetables are added to the dish and placed in a saucepan, which is turned over before putting this dish on the table. Hence the name maklyube, which literally translates as "up and down" or shape-shifting.
The composition of the dish can include many different vegetables: tomatoes, potatoes, cabbage, eggplants.
There are many Maklube recipes, as well as borscht recipes.
Most often, Maklube is served with yogurt, a simple vegetable salad, and tahini.
