Ingredients

Sour cream with a fat content of more than 20% 60 gr.
Egg SB or CB 1 PC.
Flour / s 280 gr.
Butter 100 g
Water 30 ml.
Dry yeast 4 gr.
Sugar 5 gr.
Salt 1 gr.
To dust the dough:
Sugar 100 g
Ground cinnamon 1 tsp

Cooking method

  • Put sugar in warm water, stir, then add yeast and again, mixing everything well, leave for 15 minutes, until the cap appears.
  • Add the egg to the sour cream, mix, pour out the yeast and mix everything again.
  • Add salt and chilled butter to the flour, chop with a knife or rub into crumbs with your hands. Pour in the egg and yeast mixture and quickly knead the dough.
  • Roll the dough into a ball, wrap it in foil or put it in a container with a lid and put it in the refrigerator for 1.5-2 hours.
  • After two hours, remove the dough from the refrigerator, knead it slightly and roll it out into a 40x20 cm layer, without adding flour.
  • Next, mix sugar and cinnamon, intended for dusting the dough, and sprinkle on the table. Put a rolled layer of dough on it, lightly walk over the dough with a rolling pin, pressing the powder into the dough.
  • The process of folding and rolling the dough on cinnamon sugar is repeated three times.
  • Roll out the dough for the fourth time, picking up all the remaining sugar under the dough, also 40x20 cm in size, cut lengthwise into 6 strips and across into 4 pieces.
  • Then roll each strip like brushwood, put it on a baking sheet covered with baking paper, and cover with foil.

  • Turn on the oven at t-200 ° C, and after heating, bake the cookies for 15-20 minutes, until golden brown.
