Ingredients

Pumpkin puree 200 g
Pressed yeast 24 g
Sugar 150 g
Butter 150 g
Curd 9% 250 g
Yolks 3 pcs
Flour / s 600 g
Salt pinch
Candied fruit 200 g

Cooking method

  • I heated the pumpkin puree in the microwave until warm, dissolved the yeast in it and added 2 tbsp. l. sugar from the total. Stirred and put in a warm oven for proofing for 30-40 minutes. Candied fruits - I have papaya, mango, dogwood, raisins - I poured cognac. Put butter at room temperature, sugar in the mixer bowl and beat with a whisk. Then she introduced yolks, cottage cheese. Beat until smooth and fluffy. She poured the pumpkin puree dough into the bowl. Whipped again. I changed the mixer head to a hook. I added sifted flour and salt. Kneading for 10 minutes at 1 speed. The dough is elastic, lags behind the walls. She covered the bowl with foil and set it to rise. For 40 minutes. The dough should increase several times.

  • Then she introduced candied fruits, mixed with her hands. And laid out in 11 cm tins, 330-350 g in each (about a third of the form). I put it in a warm oven to rise. She put a deep frying pan with boiling water down the oven. As soon as the dough rose almost to the edges of the forms, she removed the boiling water, turned on the oven to the bottom-top mode by 180 gr. and baked cakes for 30 minutes.

We really liked the cake, both in taste and in preparation, who are looking for something simpler, so this is the very case, it couldn't be easier. She did not decorate, because for home tea drinking, although this cake is sweet without fondant.
I used frozen pumpkin puree, having previously thawed it in a strainer. I made 1/2 of the norm with one cake, who will make it in narrow forms, it is better to cool the cakes on the side, because after baking they are very tender and can fall on their side.
