P.S. I remembered one incident. In the hungry 90s they "threw out" the skins of chicken necks for sale. Cheap. But even with a large shortage of food, no one especially took them.
Mom bought this leather. Lot. Stopped the freezer completely.
I turned my nose up and said "fairy". It was a nasty chicken coooooo.
Mom, on the other hand, stuffed the skin from the necks with buckwheat porridge with mushrooms. Tied on both sides. And fried it. The result is a kind of sausages.
Oh, how delicious it was !!! Even I ate.
The next day, the filling was simpler: mashed potatoes with fried onions. Then rice and carrots were used. And so on. And so on. And the skin did not bore. The taste was different.
The neighbor tasted the "sausages" and the next day went to the store.
In general, the skin was then dismantled quickly. The village is small. The recipe became just a hit with us.
