Ingredients

eggplant 1 large or 2 small
Eggs (I have quail) 2 (10) pcs
Bulb 1 PC
Garlic 1 clove
Parsley 1 bundle
Rast. frying oil 2 tbsp. l.
Salt, spices taste

Cooking method

  • Maakuda (Tunisian omelette)Chop a clean eggplant with a fork and bake in the oven
  • Maakuda (Tunisian omelette)Cool the finished eggplant, peel and finely chop
  • Maakuda (Tunisian omelette)Finely chop the onion and garlic
  • Maakuda (Tunisian omelette)In a pan with vegetable oil, fry the onion until golden brown
