  • I want to share with you a recipe for vegetable lasagna that uses eggplant instead of regular lasagna sheets. Autumn time, vegetable and fruit abundance - I want to enjoy all this wealth and stock up on vitamins until next season. Cooking is not at all difficult, but the taste of the dish, I'm sure, will delight you.
  • Eggplant lasagna Cut the eggplants into slices 1 cm thick, brush them with olive oil, sprinkle with pepper and salt.
  • Eggplant lasagna We put the eggplants on a silicone mat or baking paper and bake for 10-15 minutes at 180 * C.
  • Eggplant lasagna Finely chop the parsley, rosemary and garlic and mix. Remove the skin from the tomatoes, grind with a blender and combine with green mass.
  • Eggplant lasagna Warm the minced meat for 5 minutes in olive oil in a saucepan, breaking large lumps.
  • Eggplant lasagna Cover the baking dish with parchment paper, sprinkle the bottom with olive oil. We spread a layer of eggplant, pour with tomato sauce.
  • Eggplant lasagna Put the minced meat on top of the tomato sauce and sprinkle with grated cheese.

Unfortunately, I don't have a photo, but I'll write about my impressions. I, of course, made a little mischief in the recipe. I did not fry the eggplant tongues separately and added Bulgarian pepper cut into strips to the tomato. They ate it at the speed of light, I didn’t have time to look back, and the lasagna was gone. I didn’t do it on parchment paper and it was a little twitchy, although I took it out with the help of an insert double boiler, next time I will do it on parchment. Marinochka, thanks again for the recipe from my whole family.
