Turkish soup Ezogelin (multicooker Redmond RMC-02)

Ingredients

Beef broth 1 l
Lentils red 5 tbsp. spoons
Round grain rice 1 tbsp. the spoon
Bulgur 2 tablespoons
Onion (medium head) 1 PC
Butter 1 tbsp. the spoon
Vegetable oil 2 tbsp. spoons
Tomato ketchup 1 tbsp. the spoon
Wheat flour 1 tbsp. the spoon
Ground paprika 1 tbsp. the spoon
Dry mint, ground 1 tbsp. the spoon
Salt taste
Ground pepper taste
Garlic 3 cloves
Allspice 1 pea
Bay leaf a piece
Water 200 ml

Cooking method

  • Mint gives this soup an unusual taste.
  • The broth was cooked from beef brisket in a Shteba multicooker for 30 minutes under a pressure of 0.7. I put an onion, carrot, celery root, allspice, bay leaf and a little salt in the broth. A lot of broth was cooked, part of it was used to make this soup. It is clear that broth can be cooked in any way, but this is the fastest way. It will work out very quickly if there is already cooked broth.
  • While the broth was boiling, I did all the preparatory work.
  • I placed lentils, rice and bulgur in a bowl for washing cereals. I washed it under running water until it was clean.
  • In a preheated frying pan in vegetable oil, I fried the flour, mixed very thoroughly so that there were no lumps. I added ketchup, fried, stirring thoroughly, rubbing the contents of the pan. In several passes, I added 200 ml of hot water, brought to a boil with constant stirring. I added paprika, mixed thoroughly. Added mint, mixed thoroughly. She let the contents of the pan simmer for a minute. She turned off the heat, covered the pan with a lid so that the sauce would not wind.
  • In the multicooker Redmond RMC-02 installed the Baking program. Finely chop the onion, fry for 10 minutes in butter (from a cold state). Finely chopped two cloves of garlic with a knife, added to the multicooker bowl, fried for another 3 minutes. Poured lentils, rice and bulgur into a bowl, mixed, fried for 1 minute. She turned off the multicooker.
  • As soon as the broth was cooked, she forcibly blew off the steam. I poured 1 liter of broth.
  • I installed the "Soup. Stew" program, added 1 liter of hot meat broth to the contents of the multicooker, mixed. Cooked for 25 minutes. Then I added a little salt, pepper to taste, bay leaf, cooked for another 5 minutes, focusing on the readiness of cereals and lentils, they should be well boiled.
  • I put the sauce in the soup, mixed it, added more salt and pepper, one slice of crushed garlic.
  • I reinstalled the "Soup. Stew" program and cooked for another 7 minutes. This was necessary for the soup to boil a little.
  • She turned off the multicooker. I let the soup steep for 5 minutes.
  • It turned out to be a very tasty and satisfying soup.
  • Bon Appetit!

Note

I have cooked soup with lentils and bulgur before, but this option is very different in taste from those soups that I cooked before. Mint gives it a special flavor and piquancy.

On the forum there is a recipe for a similar soup, but it differs in the composition of ingredients and cooking technology, so I thought that this recipe could also be displayed.

There are also many Turkish lentil soups, but they are very different from this option.

I found the recipe on the Internet.

The soup turned out to be very unusual. Hope someone will like it.

I think a lean version of this soup would be good too!

I have long wanted to try this soup, but all hands do not reach ..)) I met this recipe, but in my opinion there was no mint, thanks for reminding me about it, now I will put it in your bookmarks and cook as soon as possible, I wonder how mint is here will sound, plus such a combination of cereals .. to be honest, I have never tried bulgur in my life ..)
ps .. but still pulls potatoes here to put more
mirtatvik
kavmins, Marina, mint "sounds" great here. But potatoes are not needed here at all. Maybe a little bit of carrots, but they are not in the recipe either. You can have a little more ketchup. I'll experiment a bit next time.
